Ahhh…..Sundays.

There’s nothing like catching up on your zzzzzz’s, snuggling on the couch watching old Christmas movies, and making a hearty brunch. Why can’t everyday be relaxing, carefree, and fully of yummy treats?

Since it was freaking freezing this morning, I wanted to make something homemade for brunch. I was looking through a Bon Appetit magazine the other day and found this recipe for poached eggs in tomato sauce with chickpeas.

I happened to get lucky and have all the ingredients in the pantry (besides feta). So Mr. B and I brushed off the ol’ cast iron skillet and got to work. The recipe is very simple. Saute some vegetables, reduce the sauce, and finish the dish in the oven. Easy. Peasy.

I was a little worried that it wouldn’t be filling, but the chickpeas provided enough “meaty” flavor that it filled us both up quite nicely.

After brunch, I had a bunch of errands to run. I have a special surprise for y’all tomorrow!! (muhaahahaa) I was a little worried the mall was going to be ape s*%t, but it ended up being quite calm. I honestly think people are shopping online because there were zero lines today.

Once home, I finished up a little decorating. I put up all of my Byers’ Choice Carolers. Every year my mother-in-law, Susie, gets all of her daughter-in-laws (mind you she raised four boys) a couple of Carolers. You can meet the whole gang here.

Around 5pm, Mr. B and I decided to take a stroll downtown. Even though the weather was chilly, we wanted to check out all of the holiday lights and get some fresh air. It was pretty quiet on the 16th Street Mall. Probably because it was 25 degrees and showing signs of snow.

After our walk, we dove straight into dinner. We decided that soup sounded perfect for this cold night (the low tonight is 4). I searched Pioneer Woman’s site and found a recipe for chicken sausage, potato, and kale soup. The soup was spicy, creamy, and full of flavor. Definitely recommend trying the recipe.

We ate the soup while we waited for the BCS announcements and then caught up on K-State Men’s Basketball game versus Virgina Tech. (I will state for the record that K-State should be playing in the Sugar Bowl. I hate the BCS system.)

Now it’s time for a little #Boardwalk Empire action.
