We made it.
Did you have a crazy work week? This week wasn’t too terrible although I feel like it accelerated quickly because I leave on Sunday for Napa. I’ve been running around trying to get ready for this trip and had a minor panic attack when I looked at the weather. HOLY HOTNESS.
It’s supposed to be in the upper 90’s the entire time. Thank goodness I didn’t put away any of my shorts or dresses. Maybe I shouldn’t be that surprised with the weather, but I was in the process of getting my mind in the fall spirit. Sigh.
But! In the meantime let’s talk about a cocktail that will cool us down but still bring home those fall flavors. The secret to that balance: Apple Cider Rum Coolers. First of all, aren’t they gorgeous?! GAH. Who isn’t a sucker for a pretty drink?
This is a great cocktail to make ahead of time. Simply make a big batch of the apple cider mixture a few days before your next tailgate or fall party. You want the flavors to have a chance to get acquainted. Then mix in the rum, ginger beer and ice. So simple and oh, so refreshing!

In a medium saucepan combine apples, honey, lime juice, water, and ground ginger. Stir to combine. Next, bring the mixture to a slight simmer over medium-low heat. Cook until the apples are tender about five minutes. Remove the saucepan from the heat and let cool completely.
Once the mixture is cool pour it into a food processor or blender and puree. Place the puree into the fridge for at least an hour or up to 5 days.
To make a cooler take a 1/4 cup of the puree and place it into the bottom of a cocktail glass. Next, add one ounce of rum ( or more!) followed by ice and ginger beer. Stir to combine and garnish with fresh mint. Repeat process for remaining glasses.
