Fancy meeting you here. Does this mean we are officially on the holiday bandwagon? I say that knowing that a majority of people have Christmas lights up before the turkey even comes out of the oven.
Don’t tell anyone, but I feel like that is a holiday party foul? You know those are the same people that show up 12 minutes early to a party and consider shrimp cocktail a delicacy. But! To each their own because I am definitely ready for all things holiday.
Well, in between wrapping presents, baking cookies, and watching Christmas movies, I’m always looking for something to nosh on that is simple and delicious. Enter this Brisket Burnt Ends Grilled Cheese Sandwich with Garlic Gorgonzola Butter. Hello, lunch approved sandwich ready in 20 minutes!
Being from Kansas City, I love me some burnt ends. The only problem when I’m back home in search of said burnt ends every barbecue restaurant is always sold out. What gives? Anyways, the folks over at Curly’s BBQ have come to the rescue. They have packaged and made available Kansas City Style Burnt Ends that I can find right in the refrigerated meat case at the grocery store.
Which is why this Brisket Burnt Ends Grilled Cheese Sandwich with Garlic Gorgonzola Butter is so easy peasy to make. Well, and not to mention extremely delicious. Okay, it might put you on the naughty list, but whatevs.

1 lb Curly’s RoadTrip Eats Kansas City Style Burnt Ends
2 heads roasted garlic, cloves removed
1/2 cup unsalted butter, room temperature
1/3 cup crumbled Gorgonzola cheese
2 tbsp chopped fresh parsley
8 slices sourdough bread
4 slices provolone cheese
4 slices tomato
Arugula, for garnish
salt and pepper to taste
In a large bowl, combine roasted garlic cloves, butter, Gorgonzola, fresh parsley, salt and pepper. Take a knife and spread some of the butter mixture on each slice of sourdough bread. Next, top four slices of the sourdough bread with 1/3 cup of the Curly’s RoadTrip Eats Brisket Burnt Ends followed by a slice of provolone cheese. Add a slice of tomato followed by a piece of lettuce. Place the remaining slice of bread on top. Repeat and all four sandwiches have been assembled. Next, preheat a panini press. Place a sandwich inside the panini press and press down. Cook the grilled cheese until golden brown and the cheese has melted. Repeat until all sandwiches have been pressed. Serve and enjoy!
