As in, ring, ring, ring….”This is Karen, and I’m totally away from my phone right now, so leave a message after the beep. K. Thanks”…… beeeeeep…… Truth be told, I can’t remember the last time I left a message on someone’s cell phone. Maybe I’m just lazy? Maybe I can’t think of anything eloquent to say? I dunno.

Typically, when I call, I have a four ring policy (unless it’s an emergency!). After four, I quickly press “end” and immediately select my next form of communication; that is, text, which realistically, I should have done in the first place.

I have a love-hate relationship with Mr. Text. Some days he is a life saver, while others, he makes me want to pull my hair out. The bonkers thing, I bet 50 years from now, you won’t have to call or text someone…crazy, right? We will just tap our skull and say “send.” And they will have also invented (keep fingers crossed) the blow up microwave pizza like in Back to The Future Part II.

Oh, and before I forget to leave you a voice message telling you about how I made these ridic chocolate mousse parfaits, I’m texting writing you that I made these off the charts, easy peasy parfaits for Valentines Day. Did I mention there’s Reese’s Pieces Puffs in the parfaits? You need to dive head first into these and call me in the morning.

Chocolate Mousse Parfaits with Reese's Puffs & Chocolate Covered Pretzels

Ingredients:

for the chocolate mousse:

1/2 cup semi-sweet chocolate chips, melted

for the whipped cream:
1 cup whipping cream

for the meringue:
3 egg whites
1/4 teaspoon cream of tartar
3/4 cup granulated sugar

for the chocolate covered pretzels:
1/2 cup semi-sweet chocolate chips
1/2 cup pretzels

3 cups Reese's Puffs

Directions:

for the chocolate mousse:
Combine melted chocolate with meringue. Gently fold until well combined. Then gently fold in whipping cream. Place chocolate mousse in fridge to let it chill for at least 30 minutes. To serve, pipe mousse into a jar, pour some Reese's Puffs on top, followed by more mousse, and final topping of Reese's Puffs. Garnish with chocolate covered pretzels.

for the whipped cream:
In a mixer fitted with a whisk attachment, whisk cream until fluffy. Set aside.

for the meringue:
In a mixer fitted with a whisk attachment, blend egg whites and cream of tarter until frothy. Slowly add the granulated sugar. Whisk until soft peaks form. Set aside.

for the chocolate covered pretzels:
Melt chocolate in the microwave. Dip pretzels in chocolate and garnish top of parfait.
