Today’s recipe title might be confusing.
Or perplexing?
Whatever the case, I promise, it’s the best thing you will ever eat. I realize it’s a bold statement, but it is April and we’ve got no time for bullshite-ing.
This recipe combines several of my favorite flavors: Korean BBQ, pizza, fried rice, and cheese. Because I feel like cheese should have it’s own solar system, but that’s for a different topic for a different day. When I was putting this dish together I honestly felt like I was forcing these flavors to play nice together. Like some kind of helicopter parent.
Truth: there was a small part of me that though there is no way in hell this combo would work. But ye of little food faith, I decided to go balls in. Or is it boobs in if you are a girl? I dunno.
Anyway, I began layering starting with the pizza sauce, followed by the cauliflower rice (which is super fun and easy to make…fyi), Korean BBQ ground beef, Sriracha (for good measure), and lots of cheese! Bake in the oven and garnish with a little fresh basil, and BOOM! Easy Cauliflower Rice Korean Pizza Bowls for the win.
Of course, if you still find this dish confusing you can always ask a helicopter parent their opinion. Don’t say I didn’t warn you.
1 medium head cauliflower, cut into florets
1 tablespoon olive oil
1 lb ground beef
1 1/2 tablespoons brown sugar
1 tablespoon fresh ginger, minced
3 tablespoons soy sauce
1 tablespoon dark sesame oil
1 tablespoon green onions, chopped finely
3/4 cup pizza sauce
3/4 cup mozzarella, shredded
3 tablespoons Sriracha
Fresh basil, garnish
salt and pepper to taste
Preheat oven to 425 degrees.
Place cauliflower florets into a food processor and pulse until the cauliflower resembles rice size. Pour the cauliflower rice onto a baking sheet and smooth into an even layer the best you can. Place the baking sheet into the oven and bake for 15 minutes, tossing halfway. Remove from oven and set aside. You will have extra rice leftover so just save any leftovers.
In large bowl, combine ground beef, brown sugar, soy sauce, ginger, sesame oil, green onions, salt and pepper. Next, preheat a skillet to medium-high heat and add the olive oil and beef. Saute beef until cooked through about seven minutes. Remove skillet from heat.
To assemble, spray a ramekin or five-inch wide oven safe bowl with non-stick cooking spray. Add 1/4 cup pizza sauce to the bottom followed by a handful of the rice cauliflower then ground beef, tablespoon Sriracha, and 1/4 cup cheese. Repeat process with remaining two dishes. Place completed dishes into the oven and bake for about 10 minutes or until the cheese is golden brown. Remove and garnish with fresh basil.
