Honeycrisp & Apple Cider Bourbon Shrub is the perfect fall cocktail. Juicy, honeycrisp apples mixed with bourbon, fresh ginger, and kombucha is a delightful drink to sip on while enjoying the cooler weather!

I also talked about how our poor little peach tree didn’t produce any said peaches this year. Which I think was the final straw in my peach obsession. BUT! Not to fear. I have moved onto another ingredient. Surprisingly, not pumpkin.
I have a few things coming down the pike very soon like a BIG FAT cookbook title and cover reveal that a pumpkin recipe will just have to wait a bit longer. Seriously, you guys, I can’t wait for you to see the front cover of this bad boy. It’s bright and white and so me. JUSSSSST kidding. The cover is dark, moody, and will make you want to eat all the delicious food.
Crap! Where was I? I swear I get a scattered brain once Friday arrives. We are currently headed back to Denver after our tour of Kansas and excited to be home for a bit before we jet off to Jordan!!
Back to my latest ingredient obsession….drumroll….the apple. I realize this may not be mind blowing, but when I think of fall an apple is my main squeeze. Fun fact: I eat an apple a day. Not because of the whole it will keep the doctor away thing. Although, now that I think of it, there might be some merit to that saying because I don’t go to the doctor a whole lot. #knockonwood
Anyway, nothing goes better with apples then bourbon. Am I right? Since it’s Friday I thought it would be a good time to bust out some bourbon and apples and make this Honeycrisp & Apple Cider Bourbon Shrub. Curious, what is your favorite kind of apple? I go for either a honeycrisp or gala. Well, I roe shambowed this one and honeycrisp won.
This cocktail is pretty quick to throw together. Blend apples, fresh ginger, apple cider, lemon juice maple syrup, and bourbon in a blender. Strain the mixture, pour into a glass and top with either ginger beer or my personal favorite ginger-lemon Kombucha.
Happy hour can begin in 3, 2, 1…..
In a blender or food processor add the chopped honeycrisp apples, ginger, apple cider, bourbon, maple syrup, and lemon juice. Pulse until smooth. It’s okay if it’s a little chunky. Pour the mixture through a fine mesh sieve using a spatula to push any excess liquid out. Reserve the juices. Next, fill a few cocktail glasses with ice. Divide the honeycrisp-apple cider liquid among the glasses. Fill the remaining glass full of ginger-lemon kombucha or any kind of seltzer water works too! Garnish with apple slices and fresh thyme!
