Happy St. Patrick’s Day!
How are you celebrating this Irish holiday? Drinking a pint of green beer? Kissing a leprechaun? Pinching others who aren’t sporting green attire? This holiday makes me smile because it’s the one time during the year where no matter what heritage you hail from, you are Irish for the day.
I am not sure how I will be celebrating today. Might have to bust out an Irish jig while wearing a “Kiss Me I’m Irish” t-shirt. Back in the ‘ol college days, Fake St.Paddy’s (the week before the actual holiday) was a big deal. They would open up the bars at 6 AM and you would drink beer well into the afternoon as you watched the downtown parade. All I can say….sh$t show.
As much as I would love to think my thirty-one year old self could throw down like the old days, I think it’s best to keep my reality aimed towards making some delicious burgers. Oh, and not just any burgers. These are practically worthy of sainthood. St.Patrick would totally give this corned beef burger three clovers up.
What I love about these burgers, besides the touch of Guinness to the beef patties is the gooey, melting Irish cheddar cheese on top. Beer and cheese? You can’t ever go wrong. My 1/200th Irish heritage is smiling.
