Preheat an oven to 425 degrees. Spray a large baking sheet with non-stick cooking spray.
Separate the broccolini florets from the stalks and thinly slice the stalks. Place the broccolini on the baking sheet and drizzle tops with olive oil, salt, and pepper. Cook the broccolini for about 15 to 18 minutes or until golden brunch and slightly crunchy.
Slice the hoagie rolls lengthwise. Divide the bolognese sauce between the rolls. Next, pile the broccolini on the bottom of the hoagie rolls. Top each roll with two slices of provolone cheese.
Place the hoagies on another baking sheet and into the oven to allow the cheese to melt, about 2 to 5 minutes.
Remove and enjoy!
