Grilled Chile Lime Shrimp Skewers

Ingredients

  • 1/4 cup Olive oil
  • 1/4 cup Fresh lime juice
  • 3 cloves Garlic, minced
  • 3 tbsp Honey
  • 2 tbsp Low-sodium soy sauce
  • 1 tbsp Chili garlic sauce or Sriracha
  • 2 lbs Shrimp, peeled and deveined
  • 1/4 cup Fresh chopped cilantro
  • Serrano rounds, for garnish
  • Lime wedges, for serving

Instructions 

  • If you are using wooden skewers, make sure to soak them in water for 30 minutes to prevent the skewers from burning on the grill.
  • In a large mixing bowl, combine olive oil, lime juice, garlic, honey, sauce sauce, and chili sauce.Remove about 1⁄4 cup of the marinade to use for braising the shrimp once on the grill. Next, add the shrimp to the bowl with the marinade and toss to coat. Let the shrimp marinate for a few minutes.
  • Meanwhile, preheat your grill to medium-high heat. Thread the shrimp onto the skewers.Remember shrimp cook fast - about three minutes per side so quickly brush the shrimp with the reserved marinade when grilling!
  • Remove the shrimp from the grill and place on a serving platter. Garnish with cilantro, serrano rounds, and lime wedges!
