Sausage and Apple Hash with Whole Grain Mustard

This sweet and savory Sausage and Apple Hash with Whole Grain Mustard is an easy breakfast-to-dinner treat loaded with baked potatoes, fruit, and protein! You’ll love the combo of flavors and textures in every forkful- from the crisp JUICI apples, fluffy baked taters, and meaty sausages- all coated in whole-grain mustard to give them a delicious appetizing boost!

Ingredients

  • 3 cups Golden potatoes, cut into cubes
  • 2 tbsp Olive oil
  • Kosher salt and pepper to taste
  • 2 medium JUICI apples, cored and cut into wedges
  • 4 links Pork breakfast sausage, cut into rounds
  • 1.5 tbsp Whole grain mustard
  • 1/2 cup Sliced yellow onion
  • Fresh arugula, for garnish

Instructions 

  • Preheat an oven to 425 degrees. Spray a baking sheet with nonstick cooking spray. Place the potatoes on the baking sheet and spread into an even layer. Next, drizzle the tops of the potatoes with olive oil, salt, and pepper. Cook the potatoes for about 30 minutes, tossing halfway until golden brown.
  • Next, preheat a large nonstick skillet to medium-high heat. Add the sausage to the skillet and cook until starting to brown, about 3 to 4 minutes. Next, add in the onions and continue to cook. If you need to add some olive oil to the skillet that’s okay. Keep cooking the sausage and onions for another three minutes. Remove from heat and in the Juici apples, potatoes, and mustard. Toss to combine. 
  • Pour the hash into a large serving bowl and garnish with fresh arugula.
