Cottage Cheese Blueberry Waffles

Cottage Cheese Blueberry Waffles are packed with protein and made with a handful of simple, wholesome ingredients. These healthy waffles are a great alternative to traditional waffles and very kid-friendly!

Ingredients

  • 1 24oz Container cottage cheese
  • 1 1/2 cups All-purpose flour
  • 1/4 cup Flaxseed meal
  • 2 tbsp Granulated sugar
  • 1 tbsp Baking powder
  • 1/2 cup Milk
  • 3 large Egg whites
  • 1/4 cup Peanut butter
  • 1/4 cup Vegetable oil
  • 1 1/2 cups Fresh Blueberries
  • Maple syrup, for garnish

Instructions 

  • Place the whole container of cottage cheese in a blender or food processor. Blend the cottage cheese until smooth. If you need to add a splash of water or milk to help get it moving that’s okay! 
  • Once blended, set aside 1 ½ cups of the whipped cottage cheese. Next, in a medium bowl combine flour, flaxseed meal, sugar, baking powder, and ¼ tsp kosher salt.
  • In another mixing bowl, whisk together the remaining 1 ½ cups whipped cottage cheese, milk, egg whites, peanut butter, and vegetable oil. Add the flour mixture to the cottage cheese mixture and gently combine. Fold in the blueberries.
  • Preheat a waffle maker to medium heat. Spray with cooking spray and take about ⅓ cup of the waffle batter and place it in the waffle iron. Cook until golden brown for about three minutes. Remove from the waffle iron and set aside. Repeat the process until all the batter has been used. 
  • Garnish waffles with butter, honey, and reserved whipped cottage cheese!
