Place the whole container of cottage cheese in a blender or food processor. Blend the cottage cheese until smooth. If you need to add a splash of water or milk to help get it moving that’s okay!
Once blended, set aside 1 ½ cups of the whipped cottage cheese. Next, in a medium bowl combine flour, flaxseed meal, sugar, baking powder, and ¼ tsp kosher salt.
In another mixing bowl, whisk together the remaining 1 ½ cups whipped cottage cheese, milk, egg whites, peanut butter, and vegetable oil. Add the flour mixture to the cottage cheese mixture and gently combine. Fold in the blueberries.
Preheat a waffle maker to medium heat. Spray with cooking spray and take about ⅓ cup of the waffle batter and place it in the waffle iron. Cook until golden brown for about three minutes. Remove from the waffle iron and set aside. Repeat the process until all the batter has been used.
Garnish waffles with butter, honey, and reserved whipped cottage cheese!
