Baked Three Cheese Onion Dip

What’s the plan? 

For NYE that is. 

Are you hitting the town? Going over to a friends house? Hunkering in? We are definitely the latter. After our whirlwind tour of Kansas over the holidays we are ready to chillax, watch some football, drink some bubbles and be in bed by 9pm. 

Although I will miss New Yurt Eve. For the past couple of years the Denver Village trotted up to Tennessee Pass to ring in the new year at 11,000 feet. I won’t miss the frigid cold or peeing in an outhouse. However, I will miss waking up and starting a new year in the mountains. Once Charlie is older I hope we can go back! 

Anyway, I am still finalizing what I want to make for a NYE dinner. I thought about making coq au vin which is my all-time favorite comfort dish. Or maybe a prime rib? I dunno. I might just do heavy appetizers and include this Baked Three Cheese Onion Dip. 

This dip is seriously so cheesy and, did I mention easy? Ha! Just combine all the cheeses, bake until bubbly, and then serve with your favorite dippers. BUT! Don’t forget to wash it all down with a few cocktails. If you need some last minute ideas, I’ve got a few:

Baked Three Cheese Onion Dip

Ingredients:

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • pinch of kosher salt
  • 8 ounces plain cream cheese, room temperature
  • 1/2 cup mayonnaise
  • 2 tsp cornstarch
  • 1 cup shredded white cheddar, divided
  • 1/2 cup shredded Monterey Jack, divided
  • ground pepper
  • 2 tbsp chopped chives
  • 2 tbsp chopped peperoncini
  • toasted baguette slices for garnish

Directions:

  1. Preheat your oven to 375 degrees. Spray a 1-qt baking dish with non-stick cooking spray.
  2. Preheat a medium skillet to medium heat. Add olive oil, onion, and kosher salt. Cook the onion until golden brown about 8 to 10 minutes. Remove skillet from heat and let cool.
  3. In a food processor, pulse together cream cheese and mayonnaise until smooth.
  4. In a medium bowl toss together cornstarch, 3/4 cup cheddar, and 1/4 cup Monterey Jack. Next, mix in the cream cheese mixture and cooked onion. Season with salt and pepper.
  5. Scrape the mixture into a baking dish and top with remaining cheese. Bake the dip until golden and bubbling about 20 minutes. Let the dip cool slightly then top with chives and peperoncini. Serve with toasted baguette slices.
