The ingredients for making pancakes are very simple. BUT! For this recipe we are adding in an extra step to make these extra fluffy and dreamy. You’ll need:
All-Purpose flour
Baking Powder
Milk
Egg yolk
Egg whites
Unsalted Butter
Mixed Berries
Maple syrup
Tips for Making these Easy Souffle Pancakes with Fresh Berries:
1) Egg Whites. Whenever you are whipping up egg whites you need them to be at room temperature. Just set the egg whites out for at least 30 minutes prior to whipping them up. Also, use a glass bowl if you can. It keeps the temperature even so they form nice peaks!
2) Measuring out batter. Once the batter is ready I always measure out the batter before adding it to the hot skillet. You will want a 1/4 cup so that way each pancake comes out to the same size!
Can I make these gluten free?
Of course! Simply substitute the all-purpose flour for almond or any gluten free flour!
Can I freeze these pancakes?
Yes! I love making an extra large batch and freezing some for busy weekday mornings. You can freeze for up to 3 months.
Do I have to use Mixed Berries?
Nope! You can add whatever additional toppings your heart desires. Try chocolate chips, sprinkles, whipped cream, etc.
How long do pancakes last in the refrigerator?
Pancakes and waffles can be stored in an air tight container and will be good in the refrigerator for 2-3 days.
