How did that happen? Sighhhhhhhhhhh. Today is the last day of August. Or what feels like the last day of summer. Yes, Labor Day weekend is in like five minutes, but Pinterest is already exploding with pumpkin recipes, Halloween-themed parties, and fall attire.

So, my plan to hold onto to summer a bit longer is by making a few of these Grilled Lamb Souvlaki Bowls. Picture fresh summer produce – juicy tomatoes, crisp cucumbers, artichokes, and citrusy lemons piled high. Followed by the piece de resistance of these bowls, grilled lamb steaks.

Can we talk about lamb for 2.2 seconds? I know that a lot of folks don’t use lamb as much as beef, chicken, or pork. But I am here to tell you, lamb is super delicious and doesn’t need to be reserved for special occasions. In the Grier household, we cook with lamb at least once a week whether it’s ground, steak, or mini chops. Grilled Lamb Souvlaki Bowls

Ingredients:

1/2 cup olive oil
1/4 cup lemon juice
2 tsp lemon zest
3 garlic cloves, minced
1 tbsp dried oregano
1 teaspoon cumin
salt and pepper to taste
4 Superior Farms Lamb steaks
4 cups cooked couscous
Artichoke hearts, garnish
Grape tomatoes, garnish
Red onion, garnish
Kalamata olives, garnish
Feta crumbles, garnish
Cucumber rounds, garnish
Lemon slices, garnish

Directions:

In a bowl, combine olive oil, lemon juice, zest, garlic, oregano, cumin, salt, pepper. Whisk until everything is well combined. Place the lamb inside a large plastic bag. Pour the marinade over the lamb and put the bag in the fridge to marinate for at least 30 minutes or overnight for best results.
Preheat grill to medium high heat. Place the lamb on the grill and cook for about four minutes on the first side, flip, and cook additional three to four minutes depending on how well you like your steaks done. Place steaks on a plate and let them rest before slicing.
To serve: place a cup of cooked couscous into a bowl and top with sliced lamb steak and desired garnishes listed. Repeat process with remaining bowls. Enjoy!
