I don’t know about you, but I’m always looking for ways to jazz up chicken. I mean, there are only so many ways a girl can enjoy chicken breasts. Which is why when I do mix up my chicken dinner game I reach for bone-in, skin-on chicken thighs. 

MY WORD. You talk about so much flavor hidden inside a protein. Plus, chicken thighs are relatively inexpensive compared to chicken breasts. I KNOW!

What’s in this Mediterranean Chicken Thighs with Lemon-Cucumber Relish? 

This dish is fabulous because not only does it come together quickly, but the flavor. OMG! Big fan of using fresh ingredients to make simple meals! For this recipe you will need: 

  • Bone-in Chicken Thighs
  • Cumin
  • Cucumber
  • Grape Tomatoes
  • Garlic
  • Lemon Zest + Juice
  • Feta 

Tips for Making Mediterranean Chicken Thighs with Lemon-Cucumber Relish:

1) Chicken Thighs. For this recipe I used bone-in, skin on chicken thighs because they pack so much flavor. When roasted at high heat the flavors just blend together beautifully. My biggest tip is making sure you bring the chicken to room temperature before cooking! 

2) Cucumber. I would use an English cucumber. You can generally find them in the grocery store and are typically wrapped. This type of cucumber doesn’t have that waxy skin and tastes fresher! 

Do I have to use bone-in chicken thighs? 

Nope! You could use regular chicken thighs or even chicken breasts. If you do cook chicken breasts you will need to decrease the cooking time so as to not dry out the chicken. 

May I substitute the cucumbers? 

Yes! I would try red onion or even pita chips that have baked. You could even leave out these additions as the flavor itself with the tomatoes is amazing! 

What should I serve this with? 

Couscous would be a great side to add to this dish. Of course, a big heaping spoonful of hummus and pita would be delicious as well.

Mediterranean Chicken Thighs with Lemon-Cucumber Relish

Ingredients:

  • 8 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 1 tbsp ground cumin
  • 2 1/2 cups chopped cucumber
  • 1 cup halved grape tomatoes
  • 1/4 cup chopped red onion
  • 1/2 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 garlic cloves, minced
  • feta crumbles, for garnish

Directions:

  1. Preheat your oven to 425 degrees. Spray a cast-iron skillet with non-stick cooking spray.
  2. Place the chicken thighs into the skillet. Drizzle the tops with olive oil, cumin, salt, and pepper. Cook the chicken thighs for at least 45 minutes or until the internal temperature reaches 165 degrees.
  3. Meanwhile, mix together the cucumbers, grape tomatoes, red onion, lemon zest, lemon juice, garlic, salt, and pepper. Toss to combine.
  4. Remove the chicken thighs from the oven and top with the relish and feta. Serve and enjoy!
