Moroccan Cauliflower Bake

Moroccan Cauliflower Bake is an easy, sassy vegetarian side that’s perfect for Friendsgiving!

For round two of Friendsgiving prep. 

In case you missed it, yesterday I posted a recipe that’s super easy to make and will feed a crowd. This Sweet Potato Hummus with Harvest Greens is a delicious appetizer or side dish. Because let’s be real if hummus wasn’t served at Friendsgiving, did your Friendsgiving really happen?

Anyway, today’s recipe is going to push us out of the standard holiday buffet zone. Honestly that’s one of the reasons why I love Friendsgiving so much is because it’s an opportunity to change things up. Meet your new favorite dish: Moroccan Cauliflower Bake! 

You may be thinking…Moroccan? Really, Lauren? Yes, really. The spices in this mix are an 11/10 situation. If spices like cardamom, turmeric, paprika, etc. don’t bring people together I don’t know what will. Besides the flavor the cauliflower is baked with cheese and pomegranates. A wining combination if you ask me.  

This is also a great dish to make ahead of time and reheat once you get to your Friendsgiving location. Which means you get to hang out with peeps you love more and nosh on all the tasty spread provided!

Moroccan Cauliflower Bake

Ingredients:

  • 1 1/2 large heads cauliflower, cut into florets
  • 1 tbsp paprika
  • 1/2 tbsp ground turmeric
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 3/4 tsp ground allspice
  • 1/2 tsp ground pepper
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground coriander
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne
  • 6 tbsp unsalted butter
  • 1/2 cup heavy whipping cream
  • 3 garlic cloves, minced
  • 2 cups shredded white cheddar
  • 1 cup shredded mozzarella
  • Crumbled feta, for garnish
  • Pomegranate arils, for garnish
  • Chopped fresh parsley, for garnish

Directions:

  1. Preheat an oven to 400 degrees. Spray a 9X12 baking dish with non-stick cooking spray and set aside. Bring a large pot of water to a boil and add the cauliflower. Cook the cauliflower until tender; about eight minutes. Drain and add cauliflower to a large mixing bowl.
  2. In a small mixing bowl combine paprika, turmeric, cinnamon, ginger, allspice, pepper, cardamom, coriander, cumin, and cayenne. Toss about 1.5 tbsp of the Moroccan spice mixture with the cooked cauliflower. You will have leftover spice mixture. Take half of the cauliflower and spread it evenly into the bottom of the prepared baking dish. Pour half the heavy cream over the cauliflower. Sprinkle the top of the cauliflower with half the butter, garlic, cheddar, and mozzarella. Repeat process with remaining ingredients.
  3. Bake the cauliflower until the cheese has melted and golden about 30 minutes. Remove from oven and garnish with feta, pomegranate arils, and parsley. Serve and enjoy
