Sesame Roasted Salmon BLT with Kimchi Yogurt Dressing


Sesame Roasted Salmon BLT with Kimchi Yogurt Dressing is a simple, healthy sandwich that only takes 20 minutes to make! Baked Copper River king salmon topped with a spicy yogurt dressing, bacon, and lettuce. You won’t look at a BLT the same way ever again.

What makes a sandwich guuuuuuurrrrrrrrrreat?

Is it the bread? The ingredients? The condiments? I think simplicity is the key. Nothing is easier to make and fills the belly faster than a good ol’ pb and j sandwich. Preferably smooth peanut butter smothered on top of two sourdough pieces of bread and the more strawberry jam the better if anyone is asking.

BUT! To be honest, peanut butter and jelly isn’t my go to when I need a sammie stat. Is it weird that I crave BLT’s? Whenever I’m at a sandwich shop and perusing through the list of ingredients my eyes lock target on – bacon, lettuce, and tomato. Mayo? You betcha! I can still remember to this day my first bite of a BLT sandwich. I had the exact same expression as that crazy You Tube video of the little girl eating birthday cake.

However, over the years I have progressed into widening ingredients that go into said BLT. Make no mistake, it’s a rigorous process. You’ve got to be high on the tasty-Mctasty level, which is why it was a no brainier to add some Copper River king salmon to my BLT circle of love.

And it just so happens that the wonderful folks over at Copper River Salmon sent a lovely piece of this high-end, fit for royalty piece of king salmon. Copper River king salmon is only available for a short time of the year because the salmon have to travel a long way to spawn and that’s how they stock up on a fat, which makes it holy-buttery-deliciousness!

Sesame Roasted Salmon BLT with Kimchi Yogurt Dressing

Ingredients:

for the salmon:

4 6oz center-cut pieces Copper River king salmon
1/4 cup olive oil
1/4 cup toasted sesame seeds
salt and pepper to taste
8 slices bacon, cooked
8 tomato slices
4 pieces butter lettuce
8 slices brioche bread

for the kimchi yogurt dressing:

1/2 cup kimchi, drained
2/3 cups plain Greek yogurt
salt and pepper to taste

Directions:

for the salmon:

Preheat oven to 400 degrees.
Spray a baking sheet with non-stick cooking spray.  Place salmon on baking sheet. Drizzle each salmon with 1 tablespoon olive oil, 1 tablespoon sesame seeds, salt and pepper. Bake salmon for about 12 to 13 minutes. Remove from oven to rest before adding to sandwich. Once cooled remove the skin from the bottom of the salmon.
To make the sandwich: take two slices of brioche bread and spread the kimchi yogurt dressing on top of each slice. Next, place a piece of lettuce on one of the slices followed by two tomato slices, 2 pieces of bacon, and salmon. Place the remaining slice of bread on top and enjoy! Repeat process with remaining three sandwiches!

for the kimchi yogurt dressing:

In a food processor, place kimchi and yogurt. Pulse until smooth. Pour dressing into a small bowl and place in the fridge to allow the flavors to combine for at least 30 minutes.
