I will never say no to a tater tot.

You know this.

Even if one suddenly drops on the floor and stays there longer than the recommended five seconds. My love for tater tots run deep. I mean, who can say no to a perfectly golden fried cube? Not I!

So, when I got my mitts on the Dinner for Two cookbook written by Julie author of the blog, Table for Two, and spotted her recipe for Smoked Sausage and Spinach Tater Tot Breakfast Bake, I knew tater tots would be in my near future.

I met Julie at my first food blogging conference, Mixed back in 2012! It feels like yesterday we were making cakes with Duff Goldman and reenacting scenes from Dirty Dancing. To say I was nervous about diving into the food blogging conference world is a complete understatement. I didn’t know a single soul and thought I was a huge dork that no one would like.

But! I remember Julie reaching out via Twitter a few days before the conference started. She said she was excited to meet me and was looking forward to the conference! Instantly, I felt a zillion times a better! She was one of the first blogs I read and to be in communication with her was well, super-duper-fan-freaking-cool!

Long-story short, Julie has been a blogging mate every since! To see her blog and success blossom is so exciting, and I am unbelievably proud of her. You guys have to pick her new cookbook because not only are the recipes scrumptious and delicious, but it makes for a great holiday gift! I highly recommend making the Smoked Sausage and Spinach Tater Tot Breakfast Bake because it’s an easy dish to whip up for a potluck or if you are feeding a crowd on Christmas morning!

Smoked Sausage and Spinach Tater Tot Breakfast Bake

Ingredients:

6 ounces smoked sausage, sliced into rounds and quartered
4 cups loosely packed baby spinach leaves
4 large eggs
2/3 cup milk
1 cup freshly grated cheddar cheese, divided
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
25-30 frozen tater tots
Sriracha or hot sauce for topping (optional)

Directions:

Preheat oven to 400 degrees and lightly grease an oven-safe, 1-quart casserole dish.

In a large skillet over medium-high heat, brown sausage on both sides, about 5 to 7 minutes. Add the spinach and saute until wilted. Remove from heat.

In a large bowl, whisk together eggs, milk, 1/2 cup cheddar cheese, salt, and pepper. Add the sausage and spinach to the bowl with the egg mixture, and then pour into the prepared casserole dish. Carefully place the tater tots on top of the egg mixture. It's okay if some of them sink. Sprinkle remaining 1/2 cup of cheese on top of tater tots.

Carefully place the casserole dish onto a baking sheet, in case it spills over while baking. Place on the middle rack in the oven, and bake for 60 minutes uncovered or until the egg is completely set. Let cool for 10 minutes before slicing and serving. Drizzle with Sriracha sauce or hot sauce, if desired.
