I’m not sure how I stumbled upon it, but if you haven’t binged watched the “The Boys” do it now. I’m surprised it hasn’t gotten more press. To give you a little rundown the show is about superheroes and how they are put on a global stage by a large corporation. Well, the superheroes aren’t exactly sunshine and lollipops. They have struggles to and may have “accidentally” murdered a few folks because of their powers. 

This is where The Boys come in. It’s a group of dudes that have been affected by the mistakes of superheroes. They set out to expose the corrupt corporation and shed light on the fact that the world may not need these characters. Make sense? Are you adding it to your watchlist? High-five. 

Besides our latest TV binge, I have been binging on another item: peaches. I may be biased, but I swear Colorado grows the best peaches in the country. Did you know that you can grow peaches in a high-desert climate? Yep, yep. We used to have a peach tree at our old house that produced the most glorious peaches ever. Damn I miss that tree. 

Anyway, with peaches at every corner it would be a crime not to use them up. Enter, this peach barbecue sauce. So simple to make. Roast some peaches, put them in a blender with a few barbecue infused flavors, blend and then smother some chicken with the sauce. I mean, what’s not to like? 

And cue my favorite peach song: “Millions of peaches, peaches for free.” 

Spiced Chicken Thighs with Peach Barbecue Sauce

Ingredients:

  • for the spiced chicken:
  • 1.5 lbs boneless chicken thighs
  • 2 tbsp store-bought jerk seasoning or homemade
  • olive oil
  • salt and pepper to taste
  • for the peach barbecue sauce: 
  • 2 medium peaches, halved, pits removed
  • salt and pepper to taste
  • 1/3 cup yellow mustard
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 2 tbsp white vinegar

Directions:

  1. for the spiced chicken thighs:
  2. Preheat an oven to 400 degrees. Line a baking sheet with foil and spray with non-stick cooking spray.
  3. In a large bowl toss together the chicken thighs, jerk seasoning, olive oil, salt and pepper. Place the chicken on the baking sheet. Take the peach halves and place them cut side down on the baking sheet next to the chicken. Bake the chicken and peaches for 30 minutes.
  4. With 10 minutes remaining, remove the peach halves and place them in a blender. Continue to cook the chicken for additional 10 minutes. Remove from oven and set aside.
  5. In the blender with the peach halves add the yellow mustard, honey, brown sugar, and white vinegar. Blend until smooth.
  6. Put the chicken on a large tray and serve the peach barbecue alongside. Enjoy!
