Ingredients

  • 2 cups Panko breadcrumbs
  • 3 tbsp Za'atar seasoning
  • 1 cup All-purpose flour
  • 2 large Eggs
  • 6 to 8 Dill pickle spears
  • 1/4 cup Grated Parmesan cheese
  • For the bloody mary sauce:
  • 1 tbsp Olive oil
  • 1 large Shallot, minced
  • 1 tbsp Capers, drained
  • 1/3 cup Vodka
  • 1 tsp Celery seed
  • 2 1/2 cups Halved grape tomatoes
  • 1 tbsp Worcestershire sauce
  • 2 tsp Tabasco
  • Kosher salt and pepper to taste

Instructions

  • n a medium saucepan preheated to medium-high heat add the olive oil, shallots, and capers. Saute for a few minutes until the shallots have turned slightly golden. Next, add in the vodka and let it simmer for a few minutes or until slightly reduced.
  • Add in the tomatoes, Worcestershire sauce, celery seed, Tabasco, kosher salt and pepper. Bring the mixture to a simmer and cook for about 5 minutes. Remove from the heat and allow to cool slightly. Transfer the mixture to the food processor and pulse until smooth. Set aside.
  • In a bowl, mix together the Za’atar and panko. In a second bowl, whisk the two eggs together. In a third bowl, add the flour. Next, take a pickle and dredge it through the flour followed by the egg and then the panko. Repeat the process until all pickles have been coated.
  • Place the pickles into an air fryer preheated to 400 degrees. Cook the pickles for about 8 to 10 minutes. If they need more time in the air fryer that’s okay. You want the pickles to be nice and golden brown. Place the pickles on a plate, dust with Parmesan cheese and serve with Bloody Mary dipping sauce. Enjoy!
