Garnish: jalapeno slices, cilantro, sour cream, etc.
Instructions
Preheat your oven to 425 degrees.
Next, bring a pot of water to a boil and add in the orzo. Cook the orzo according to package instructions and then drain. Set aside.
Preheat a large 10-inch skillet to medium-high heat. Add a splash of olive oil to the skillet followed by the ground beef. Cook the beef until it is no longer pink for about 5 minutes. Using a slotted spoon remove the beef from the skillet and set aside on a plate.
In the same skillet as the ground beef add a little bit more olive oil, onion, green pepper and garlic. Saute the veggies until softened for about 5 minutes. Next, add the ground beef back in followed by the spices, kosher salt, and ground pepper. Cook for about a minute or two.
Stir in the stewed tomatoes (including juices) and using a spoon break up the tomatoes. Add in the orzo and give everything a big stir. Next, sprinkle the top with shredded cheese and place the skillet in the oven to allow the cheese to melt for about 5 minutes. Remove from the oven and garnish.
