Spiced Pumpkin Tomatillo Salsa

Ingredients

  • 1 lb Fresh tomatillos, husked, rinsed
  • 8 cloves Garlic, peeled
  • 3 tbsp Olive oil
  • Kosher salt and pepper to taste
  • 3 Dried Guajillo chiles, roughly chopped
  • 1 cup Salted, roasted pumpkin seeds, finely chopped
  • Tortilla Chips or Veggies, for serving

Instructions 

  • Preheat your oven to 425 degrees. Spray a baking sheet with non-stick spray. 
  • Next, place the tomatillos and garlic on the baking sheet. Toss with olive oil, kosher salt and pepper. Roast for about 15 to 20 minutes or until the tomatillos start to turn brown. Remove the baking sheet from the oven and add in the dried chilies. Continue to roast for another 5 minutes. 
  • Remove the baking sheet from the oven and toss everything into a food processor. Blend until smooth. Pour the salsa into a bowl and stir in pumpkin seeds. Serve the salsa with chips or veggies!
