It took me a second to realize what was happening, but once I heard the theme music, “Bad Boys, Bad Boys, whatcha going do.” I knew exactly what was going down. The trailer that I am speaking of is for Bad Boys 3 starring Will Smith and Martin Lawrence. 

The first Bad Boys came out in 1995. Almost 25 years ago! I think I was still sporting flannel and listening to Pearl Jam when this movie hit the big screen. Needless to say I am stoked they are making another one because Will and Martin are one of the best duos on screen.

Okay, before I go down a Netflix show rabbit hole let’s chat about these Banana Coconut Blender Pancakes with Peanut Butter Maple Syrup. Definitely a mouthful. They sound a little high maintenance, but I promise you these bad boys are not. You simply mix everything in a blender, pour the batter into a hot skillet, and cook. Drizzle with the peanut butter maple syrup and what you get is a show stopping meal on a Monday morning.

Banana Coconut Blender Pancakes with Peanut Butter Maple Syrup

Ingredients:

  • 1 1/2 cups old fashioned oats
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 large ripe bananas
  • 1 tbsp maple syrup + 1/4 cup
  • 1 egg
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1/4 tsp kosher salt
  • 1/4 cup unsweetened shredded coconut
  • 1/2 cup creamy peanut butter

Directions:

  1. In a blender, add all the ingredients. Blend until the batter is smooth. Preheat a medium skillet to medium heat and spray with non-stick cooking spray. Pour about 1/3 cup of the batter into the skillet and cook until the bubbles have popped about two minutes and flip. Cook for additional minute.
  2. Quick note: the batter will feel like it won’t flip but just move quickly and it will flip and stay together. Repeat process for remaining batter. In a medium microwaveable bowl add the 1/4 cup maple syrup and 1/2 cup peanut butter. Heat on a high and stir until smooth. Place a few pancakes on a plate and drizzle top with peanut butter maple syrup!
