Quit looking at the red curtain over my left shoulder. I promise there is no wizard or a guy that goes by Willy Wonka behind that curtain. What you do NEED to know is behind said magical red curtain is a Dark Chocolate Brownie Energy Bite that will blow your mind.

You guys know that I Iuvvvvvvvv me some brownies. But since it’s January and I had at least an entire 9X9 pan of gooey, dark chocolate brownies over the holidays, I thought these bites would be a more logical solution to satisfy my craving. Did I mention these chocolate gems are no-bake? It’s okay, you can hug me now.

Besides toasting the pistachios and almonds for a hot second, all you need is a blender and 30 minutes of patience. The patience is a small price to pay to the brownie energy gods, but I promise it’s worth letting these bites sit and collect their thoughts. Once collected, roll these beauties in toasted nut heaven. It sounds like a giant porno bath, but hey, this blog is PG-13 1/2 so it’s cool.

After that, you can share these bites with your wizard friend. Oh shoot. Is that the Wizard of Oz and Willy Wonka duking it out?

Dark Chocolate Brownie Energy Bites

Ingredients:

1/4 cup unsalted pistachios, shelled
1/4 cup unsalted almonds
12 medjool dates, pitted, roughly chopped
2/3 cups almond butter
1/3 cup unsweetened cocoa
2 tbsp water
1 tsp vanilla extract
1/4 tsp kosher salt
1/2 cup dark chocolate chips, melted

Directions:

Preheat a skillet to medium heat. Add the pistachios and almonds to the skillet and toast the nuts until slightly golden brown. About four to five minutes. Remove the skillet from the heat and let the nuts cool slightly. Once cooled, add the nuts to a blender or food processor and blend until finely chopped. Pour the finely chopped nuts into a large bowl.
Next, add the dates, almond butter, cocoa, water, vanilla extra, and salt to the blender or food processor. Blend until smooth. Pour mixture into a bowl and roll into about 15 one-inch sized balls. Take each of the ball and roll in the pistachio/almond mixture. Place the ball on a baking sheet. Repeat process with remaining bites and place in the fridge for 30 minutes to set. Remove from fridge and garnish tops with melted chocolate.
