Which is why I’m super excited to chat about today’s recipe. Trust me, you are going to flip. 

I’m a firm believer that you need something convenient, healthy and delicious to eat during the holiday season. A recipe that will make dinner time feel like a breeze. A recipe that boasts tons of flavor. A recipe that has great artisan taste. Let me introduce you to your new go-to recipe: Open-Faced Persian Chicken Sandwich with Pomegranate Honey. 

This sandwich may sound like a mouthful, but I assure you it’s simple to put together. Toss chicken thighs with spices like turmeric and paprika. Roast the chicken thighs until juicy and slightly crispy. Ya, with me so far? Because this is where the sandwich becomes an 11/10 situation thanks to The Rustik Oven Artisan White Bread. 

Take a slice of Artisan White bread and toast it. I love using bread from The Rustik Oven because the taste and texture is off the charts. It has the quality of artisan bread from a local bakery, but with a longer shelf life which makes for less stress when meal planning. Plus, what’s not to love about a slice of bread made without any artificial colors, flavors, or preservatives? Just simple, real ingredients.

Once you’ve got your sliced bread toasted start building your sandwich. I used a mixture of lettuce, tomatoes, cucumbers, and radishes and set the sliced chicken thighs on top. Next, drizzle the entire sandwich with some pomegranate honey. GASP! This Open-Faced Persian Chicken Sandwich with Pomegranate Honey is worthy of a holiday break!

Open-Faced Persian Chicken Sandwich with Pomegranate Honey

Ingredients:

  • 1 tbsp turmeric
  • 1/2 tbsp cumin
  • 1/2 tbsp paprika
  • 1/2 tbsp garlic powder
  • salt and pepper to taste
  • 4 boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 1/3 cup honey
  • 1/4 cup pomegranate arils
  • 4 slices  Rustik Oven Artisan White Bread
  • grape tomato, garnish
  • cucumbers, garnish
  • lettuce, garnish
  • radish, garnish

 

Directions:

  1. Preheat an oven to 400 degrees. Spray a baking sheet with non-stick cooking spray and set aside. In a small bowl combine turmeric, cumin, paprika, garlic powder, salt and pepper. Place the chicken thighs in a bowl and toss it with the spices. Place the chicken on the baking sheet and drizzle tops with olive oil. Cook chicken thighs for about 30 minutes.
  2. Meanwhile, in a small bowl combine honey and pomegranate arils. Remove chicken from the oven and slice thinly. Take a slice of Rustik Oven Artisan White Bread and top with lettuce, grape tomatoes, cucumbers and radishes. Place the sliced chicken thighs on top and drizzle with pomegranate honey. Repeat until all sandwiches have been made!
