Fingers crossed the warmer weather will stay put for a bit. Being able to walk outside to soak in the sun makes a huge difference on my mental and lb game. 

Truth: I have been eating all the carbs. 

Not ashamed of it. I’m not going to a beach anytime soon and truthfully, it feels good to eat comforting food. Please tell me I’m not the only? Also, isn’t it secretly exhilarating to not have to worry about buying a swimsuit? Maybe that’s the true silver lining in all of this?! GASP.

Okay, speaking of comforting food and carbs. Today’s recipe is super comforting and carbalicious. These  Parmesan and Pepper Baked Potato Chips are dare I say, OUTSTANDING. Not only are a freaking breeze to make, but how fun are the circles?

Everyone always cubes potatoes, but the circle needs some love to. These bad boys cooks up in less than 30 minutes and are extra sexy when sprinkled with some parm-parm action. Oh! But don’t forget my quick lemon aioli to dip the potato circles into. 

Now who needs some comforting carbs? 

Parmesan and Pepper Baked Potato Chips

Ingredients:

  • 2 large russet potatoes (about 1 lb), sliced 1/8 thick
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup mayonnaise
  • 1 lemon juiced
  • zest of 1 lemon
  • 1 garlic clove, grated

Directions:

  1. Preheat oven to 400 degrees. Place a wire rack on a baking sheet. Cover the wire rack with foil and spray with non-stick cooking spray. This will help keep the potatoes elevated so they get crisper. If you have two baking sheets and two wire wracks go ahead and prep both. If you don’t simply make the potato chips in batches.
  2. Place the potato chips on the foil. Drizzle the tops with olive, salt, and pepper. Bake the chips for about 25 to 30 minutes rotating the pans halfway through. Check the potatoes with about five minutes left to make sure some of the smaller chips are burning.
  3. While the chips cook, mix together the mayonnaise, lemon juice, lemon zest, garlic, salt and pepper. Set aside.
  4. Remove the chips from the oven and sprinkle with the tops with Parmesan cheese. Feel free to add more if desired! Serve the chips on a platter with lemon aioli on the side!
