Tahini Marinated Grilled Chicken Breasts with Cucumber Caprese Salad

The sun is out, flowers are in full bloom, smell of freshly cut grass is in the air and we’ve all moved from the kitchen to the patio grill. Cooking outdoors is one of my greatest passions. Whether I’m having a gaggle of my best girlfriends over or simply grilling for Bret and me, there’s something about dining al fresco that gives food a little somethin’, somethin’.

Now when it comes to deciding what to grill the options are endless. So, I thought I would go back to the basics for a hot second and talk about grilling chicken breasts. I’ve been asked this question a lot, how do you keep chicken breasts from drying out while you’re grilling?

The answer comes into two forms:

1) Marinate your chicken for at least 24 hours. I used a simple mixture of tahini, parsley, mint, shallots, and lemon juice to make these Tahini Marinated Grilled Chicken Breasts with Cucumber Caprese Salad. Marinating the chicken helps break down the protein and will prevent the chicken from drying out on the grill.

2) The actual chicken you are using. Believe me, if you aren’t using the best protein it’s only going to give you mediocre results.

Tahini Marinated Grilled Chicken Breasts with Cucumber Caprese Salad


  • for the chicken:
  • 1/4 cup tahini
  • 3 tbsp chopped parsley
  • 3 tbsp olive oil
  • 3 tbsp water
  • 1 tbsp chopped rosemary
  • 1 tsp grated fresh ginger
  • 2 tsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp crushed red pepper
  • 1 garlic clove, minced
  • 1 shallot, minced
  • 4 boneless-skinless Just BARE chicken breasts
  • salt and pepper to taste
  • for the cucumber caprese salad:
  • 1 1/2 cups chopped cucumber
  • 1 1/2 cups grape tomatoes, halved
  • 1 cup mini mozzarella pearls
  • 1/2 cup chopped parsley
  • 1/4 cup chopped mint
  • 1 tbsp lemon juice
  • 2 tsp olive oil
  • salt and pepper to taste


  1. for the chicken:
  2. In a medium bowl combine the first 11 ingredients. Take the chicken breasts and place them in the bottom of a large Ziplock plastic bag. Pour the marinade over the chicken breasts, seal, and turn to coat the chicken. Place the bag into the fridge for at least 24 hours.
  3. Next, remove the chicken breasts from the fridge and let it come to room temperature for at least 30 minutes. Turn on the grill and pre-heat to medium-high heat. Place the chicken on the grill and cook for 4 minutes on each side. Once cooked, remove the chicken from the grill and place on a cutting board to slightly cool before slicing.
  4. To serve: slice the chicken breasts and place on a large platter along with the cucumber caprese salad.
  5. For the Cucumber Caprese Salad:
  6. In a large bowl combine all the ingredients. Set aside until ready to serve.
