foodie fridays: tiramisu cupcakes
I don’t consider myself to be a baker.
It’s probably because I don’t crave sweet things in general so the thought of baking up a batch of cookies every day doesn’t exactly give me JAZZ hands. I love salt. The more salt the better. Give me a handful of tortilla chips with a salsa and I will be your best friend for life. Okay, before you give me your dissertation on how baked goods deserve to be put on a pedestal, let me introduce you to something that will make us both smile.
When I was scouring the Internet this weekend searching for ideas for Foodie Fridays, I came across this recipe. I literally stopped clicking the mouse, looked at Mr. B and said, “I’ve hit the dessert jackpot.” Mr. B looked at me questionably.

Mr. B eyes lit up like a Christmas tree. I guess you can feel bad for my poor husband. He has a sweet tooth. I never buy ice cream because I am not a fan. I KNOW. What kind of inhumane person doesn’t enjoy ice cream? If it makes you feel better I do feel bad sometimes that I don’t carry enough sweets in the house. Sometimes. That’s why I am making these cupcakes today because I try to give back to the world and my husband for the lack of gooey desserts’ in my life.
I LOVE tiramisu. The burnt, sugary crust and the creamy filling just melts in my mouth. And cupcakes, who doesn’t love a cupcake? Mix those two concepts together and you get a fireworks display of dessert excitement!
The cupcake is sweet and moist. The soft, alluring filling and the buttercream frosting may send you through the roof. As if it couldn’t get any better, this dessert will take you an hour to make from start to finish!
WARNING: If cupcakes are consumed, impulsive marriage proposals are possible, babies may result nine months later, and large amounts of money may be given away.

Tiramisu Cupcakes
(recipe from Eat Live Run)
Prep Time: 40 Minutes
Cook Time: 20 Minutes
Makes 9-10 cupcakes
Ingredients:
for the cupcakes:
1 1/2 cups all purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
6 Tablespoons butter, softened
3/4 cup sugar
2 eggs
1/2 cup milk
2 teaspoon vanilla extract
for the filling:
1 8oz. container marscapone cheese
1 1/2 cups confectioners sugar
2 teaspoons instant coffee granules
for the coffee buttercream frosting:
1 stick butter, softened
2 cups confectioners sugar
1 Tablespoon milk
1 tsp coffee granules
cocoa powder for dusting
Directions:
for the cupcakes:
Preheat oven to 350 degrees.
In a medium size bowl, whisk together flour, baking powder and salt. In another large bowl, cream butter and sugar. Add eggs and vanilla. Add dry ingredients and milk in thirds. Using a ice cream scoop, scoop batter into cupcake liners filling 3/4 of the way up. Bake for 25 minutes.
for the filling:
Beat marscapone cheese, powdered sugar, and instant coffee until well combined. Scoop into a small plastic bag and cut off the tip for piping. Once the cupcakes are baked and cooled, take a small knife and cut out center hole in the cupcake. Remove the leftovers. Take plastic piping bag and pipe filling into each hole.
for the coffee buttercream frosting:
Cream last amount of butter and powdered sugar. Once combined, add milk and coffee granules. Beat until it looks delicious! Frost cupcakes and dust with cocoa powder.
Very interesting way to make a tiramisú!.
