What is a Traditional Lamb Wellington?

A traditional Wellington is a show-stopping dish typically made with lamb tenderloin wrapped in puff pastry and paired with layers of mushrooms, bacon, and herbs. 

The lamb is first seared to perfection, then coated with a mixture of finely chopped herbs and mushrooms before being wrapped in golden, flaky puff pastry. Baked until golden for the ultimate luxurious meal.

Ingredients Needed to Make Mini Lamb Wellington Bites

When it comes to making appetizers for a crowd you want simple ingredients that boast a lot of flavor. These bites require only a handful ingredients but taste incredible. For this lamb-focused version, you will need the following ingredients: 

  • Mini Phyllo Shells
  • American Lamb Leg Roast – American lamb is available to meet a range of preferences—from natural or organic lamb to lamb that has been exclusively grass-fed or grain-finished. 
  • Mushrooms
  • Shallot 
  • Garlic
  • White Wine
  • Fresh Rosemary 
  • All-purpose flour
  • Unsalted butter
  • Heavy Cream
  • Kosher salt and pepper 
  • Fresh chives

How to Make Mini Lamb Wellington Bites

Not only are these bites incredibly delicious but are also embarrassingly easy to make! Follow the steps below to ensure cooking success: 

  • Remove the phyllo shells from the freezer and place them on the kitchen counter. Allow them to come to room temperature. 
  • Next, preheat a large non-stick skillet to medium-high heat. Add the olive oil, lamb leg roast cubes, kosher salt and pepper. Sear the cubes, about 2 minutes per side until golden brown. Remove the cubes from the skillet with a slotted spoon and set aside on a plate to rest for at least 3 minutes. 
  • In the same skillet as the lamb, add the white wine and deglaze the skillet over medium-high heat. You want to scrape up any browned bits from the bottom! Next, melt the butter and add in the mushrooms and cook until softened, about four to 5 minutes. Next, add in the shallots, garlic, rosemary, kosher salt and pepper. Stir and keep cooking for about 5 more minutes. 
  • Next, add in the flour and cream.Stir to combine and cook for about a minute. Add in the reserved lamb cubes. Remove skillet from heat. 
  • To serve, place mini phyllo shells on a serving platter. Spoon the lamb Wellington mixture into each phyllo shell and garnish with chives. Serve and enjoy!

Helpful Tips

  • USDA recommends that American lamb leg roast be cooked to a safe internal temperature of 145 degrees with a 3 minute rest. Use a food thermometer to make sure that you are cooking the meat right. 
  • To have a perfectly cooked lamb leg roast, make sure that it is at room temperature before cooking. We suggest at least 30 minutes prior to cooking.
  • You can prepare the lamb a day ahead to help save you some time during the week. Simply reheat and enjoy!

Red Bordeaux: a popular choice, particularly one with a good balance of acidity, tannins, and fruit. The structure of Bordeaux wines such as Cabernet Sauvignon, Merlot, and blends from the region will stand up to the richness of the lamb and the earthy flavors of the mushrooms.

Pinot Noir: the lighter body and acidity of Pinot Noir make it a great match for Lamb Wellington. 

Malbec: a full-bodied Malbec from Argentina offers dark fruit flavors, a touch of spice, and a smooth finish, making it another great pairing choice for these Lamb Wellington Bites. 

Brut Champagne: although not a wine, the crisp acidity and effervescence cut through the richness of the dish and make for a fun drink to serve alongside!

Ingredients

  • 20 to 30 Mini Phyllo Shells (about 2 packages), room temperature
  • 1 lb American Lamb Leg Roast, cut into ½-inch cubes
  • 1 tbsp Olive oil
  • Kosher salt and freshly ground pepper to taste
  • 2 tbsp White wine
  • 2 cups Finely chopped mushrooms
  • 1 large Shallot, minced
  • 3 cloves Garlic, minced
  • 1 tbsp Fresh rosemary, chopped
