FINALLY!
We finally dined at ChoLon tonight. Now, I know what your thinking. “ChoLon, that ain’t Mexican.” Well, you’re correct. Even though today is Cinco de Mayo I just couldn’t pass up the opportunity to one, celebrate the marriage of our friend’s Elizabeth and Matt (we did miss their wedding because we were running The BIG D), and two, try a new restaurant.
In my opinion I feel as though you can celebrate Cinco de Mayo all weekend, which I plan to do with lots of guacamole and Pacifo.
But back to dinner.
ChoLon, which was featured in Bon Appetit a few months ago has had me ohhhh so intrigued. ChoLon, meaning “big market”, is named after the largest Chinese-influenced market in Saigon, Vietnam or at least that’s what the website says. The idea behind the food says Chef Lon Symensma, is to offer lunch and dinner options inspired by traditional Asian dishes.

We started with drinks. Hello, champagne!
Appetizers: We shared some pork belly skewers with mustard ginger, crab rolls and beef tartar. So delish.
Entree: Halibut and Veal Cheeks. All I can say is heaven.
I was very impressed with ChoLon. Can’t wait to go back!
Tomorrow is a big day. Mr. B and I have a ski event at A-Basin all day. Remind me to bring my sunblock. K?
