foodie fridays: wild blueberry coconut cookies

Did you know there are levels of fruit?
And by levels I mean, a hierarchy of sorts.
See, not all fruits are created equal. If you placed a large wooden bowl full of different varieties of fruit (pineapple, strawberry, etc.) on a table, said fruit would be eaten in order of awesomeness.
First go the berries – strawberry, blueberry, raspberry, oh my! Next, the perfectly cut squares of juicy pineapple. If bananas and apples were sliced and tucked in somewhere, they would go next. Sometimes mango will make the bowl list depending on the season.
Finally, the melon family is added to the bowl. Does anyone else love melon? Cantaloupe and watermelon are okay on occasion, but honeydew…..what the truck? Y’all remember the movie Multiplicity starting Michael Keaton? In the movie, he makes a copy of himself, and another, and another so he can be in more than one place at a time. Well, by the time he gets to the fourth copy of himself, it’s nothing like the original. He shaves his tongue. Staples his feet to 2×4’s thinking he can ski with them. You get the picture.
I feel like honeydew is this copy of a copy of a copy. You can never not invite them to the bowl of fruit party, but no one in their right mind actually eats the honeydew. Seriously, there’s a reason they don’t sell honeydew wild preserve jam at the grocery store. Am I right?
Thankfully, they do sell wild blueberry preserve jam. Have you tried this stuff? Whoa bessie! In the hierarchy of fruits and jams, strawberry has always been my favorite, until now. All it took was one spoonful of this wild blueberry jam on top of my buttery, whole wheat toast and I was hooked!
Naturally, I couldn’t just stop at toast. I figured, why not add it to a cookie? Oh yes, a coconut cookie at that. If coconut and wild blueberry weren’t a thing, they are officially now the Prom king and queen. The best thing about this recipe, it takes nano seconds to create a sugar perfection.
Now, say it with me…”put the wild blueberry in the coconut and she ate it all up”….Sorry, I went there. Can we still be friends?

Okay, these look freaking amazing! I love all berries! Although, I sort of have a love hate with strawberries because I spend 3 weeks every june in a back breaking position weeding them and then picking them. Don’t get me started on melons! unless it’s a watermelon martini I’m not a huge fan.

I love how easy and simple this recipe is! i would go for strawberry preserves first and then blueberries and then peach. omggg i totally picture these being kinda like thumbprint cookies but larger and more in charge cause of that amazing coconut!! eeek these are amazing!
You are totally right! They do remind me of thumbprint cookies….and peach with coconut sounds AH-mazing!
I am a nut for coconut and I love wild blueberry anything. Why I’ve never thought to put the two together is beyond me. Your cookies are my idea of perfection – simple, easy & spectacular. Can’t wait to try them!

How much vanilla did you use? Did you flatten the cookie out at all or leave rounded?
Amanda – Hi! Sorry about that, I definitely forgot to include the vanilla extract amount!!! My apologies! I’ve updated the recipe to show 1 teaspoon of vanilla extract. Also, I didn’t flatten the cookies. They go pretty flat while they are baking. Let me know if you have any other questions!
Hi, these look amazing and would be great for gf baking. My only question is with 1/2 cup of sugar and sweetened coconut, are they a very sweet cookie?

I just made these for the first time today! I used raspberry seedless jam, which is so yummy! However, I’m not sure why, but this recipe didn’t turn out as I had hoped. The cookies were stuck to the cookie sheet and never cooked all the way through. I ended up with 10 cookies from this recipe btw!
Carrissa, I am so sorry the cookies did not turn out correctly!! I want to come over and bake a new batch for you! The only thing I could suggest is maybe baking the cookie the a little longer than 15 minutes the first round. If that doesn’t work, let me know! Once again, I’m truly sorry they didn’t turn out right. Let me know if you have any other questions.
