Korean Lime Margarita is a festive and sassy drink perfect for Cinco de Mayo!

Um, that next week is May 1st.

Can you blame a girl for being forgetful? This crazy spring weather is making it hard to decide if Old Man Winter is still around. Snow on Easter, WTF? Anyway, I seriously think this has been the coldest spring on record. We haven’t even gotten a chance to plant anything! Sighhhhhhh.

Is the weather crazy where you live? If you can’t tell I am just over it because I want to dine al fresco, take Juniper for a walk around the park, and watch movies under the stars. I feel as though this is not too much to ask, right?

Besides forgetting that the lovely month of May will appear next week, I almost forgot about the most important food holiday of all time: Cinco de Mayo! Don’t worry I got my sh$t together and managed to remember because per usual I had a craving for a taco and margarita while it was snowing the other day.

Korean Lime Margarita

So, today’s recipe is going to push you outside your margarita comfort zone. Meet the Korean Lime Margarita. Have ever tried gochujang? It’s a Korean chili paste that is loaded with spice. You can find it at your local grocery store (I know Sprouts has it!).

Korean Lime Margarita

I decided to take the tried and true ingredients of a margarita – triple sec, tequila, lime juice and then mixed in gochujang. Simply mix, shake, pour and what you get is a margarita with some heat.

Try it for Cinco de Mayo and if anything this cocktail might keep Old Man Winter at bay.

Korean Lime Margarita

Ingredients:

  • 4 ounces tequila
  • 2 ounces triple sec
  • 2 ounces lime juice
  • 2 tsp gochujang
  • lime wedge
  • kosher salt
  • ice
  • fresh mint, for garnish

Directions:

  1. In a large cocktail shaker add tequila, triple sec, lime juice, and gochugang. Next, add the ice and shake until well combined.
  2.  Pour salt onto a plate. Take a lime wedge and rub it around the rim of each glass. Take the rim and roll it around in the salt until the rim has been coated.
  3. Fill the two cocktail glasses with ice. Divide the margarita mixture between the two glasses and then garnish with fresh mint. Serve and enjoy!
