Peanut Butter & Orange Marmalade Oatmeal Bake is the perfect dish to start the week off on the right foot. Peanut butter, jelly and oats baked until golden and delicious!

Does anyone else feel like Marie Kondo has taken over the world?

I realize getting rid of stuff like books, sentimental possessions and clothing can be a challenge. However, I feel as though “tidying up” is not the worst thing to happen to our society. In fact, I think it’s perfect timing because we could all use some more joy in our lives right now. Am I right?

In our household Mr.B is definitely more sentimental about stuff than I am. I have found the most random sh$t like busted up pipes from a job site, a calculator from high school in a desk and t-shirts from 1997. If I could de-clutter my hubby every month Goodwill would be so happy.

I will state for the record that I am terrible about giving away kitchen gadgets and food props. This category of objects has me constantly saying. “I might need that later.” Well, later comes and goes, and I end up with a mountain of random sh$t that I never use. 

So my goal for this year is to do a purge every month that way I don’t keep buying stuff. I need to appreciate what I have and actually use it! Who’s with me? Before I take you on my personal crusade, we probably should have something to eat.

How about this Peanut Butter & Orange Marmalade Oatmeal Bake? I am just now learning about the baked oatmeal situation. I know, I know. Sometimes I wonder how I survive. Anyway, this baked oatmeal has all the flavors of peanut butter and jelly sandwich but in a crispy, golden baked goodness form. 

You can swap out the peanut butter for a favorite nut butter. The same with the jelly. I went with orange marmalade because it sounded like a good winter option. Another thing, you can make this the night before and bake it off in the morning before work or school. Booyah! 

I think Marie Kondo would approve.

Peanut Butter & Orange Marmalade Oatmeal Bake

Ingredients:

  • 5 cups old fashioned rolled oats
  • 1 1/3 cups toasted walnuts, roughly chopped
  • 1 tbsp ground cinnamon
  • 3 tsp baking powder
  • 1 tsp kosher salt
  • 4 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup maple syrup
  • 1/2 cup plain creamy peanut butter
  • 2 eggs, whisked
  • 2 tsp vanilla extract
  • 1/2 cup orange marmalade 
  • Almond butter melted, for garnish 

Directions:

  1. Preheat an oven to 375 degrees. Spray a 9X13 baking dish with non-stick cooking spray. 
  2. In a large bowl combine oats, walnuts, cinnamon, baking powder and salt. 
  3. In another large bowl combine milk, heavy cream, maple syrup, peanut butter, egg and vanilla extract. Take the dry ingredients and add them to the wet ingredients until everything is well combined. 
  4. Pour the oat mixture into the prepared baking dish and bake for about 40 to 45 minutes or until no liquid remains. 
  5. Once baked, remove the dish from the oven and allow it to cool on an wire rack at least for 10 minutes. Once cooled spread the orange marmalade over the top. Slice and serve. If desired melt some almond butter in the microwave and garnish the top.
