How to Make Sheet Pan Cabbage Burgers

I love this recipe because the whole dish is made on a sheet pan!! Follow the steps below to ensure success:

  • Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
  • Take the cabbage and slice 1-inch off the top. Next, slice the cabbage into 4 to 5, half inch thick steaks and place them on the baking sheet. Top with olive oil, kosher salt, and pepper. Roast the cabbage for about 20 minutes.
  • While the cabbage is cooking make the Guinness caramelized onions. Melt 3 tbsp of butter in a skillet over medium heat. Next, add in the sliced onions, kosher salt, and pepper. Cook the onions for about 10 minutes and then pour in Guinness. Keep cooking until the onions are caramelized for about 10 more minutes. Remove pan from heat and set aside.
  • In a large mixing bowl, combine ground beef, kosher salt, pepper and drizzle of olive oil. Take the beef mixture and form into burger patties. Remove the cabbage from the oven and place the burger patty on top of the cabbage. Gently press creating a smash burger type topping. Place the baking sheet back into the oven to cook for about 8 minutes.
  • Remove the baking sheet again and top the burgers with sliced cheese. Place the sheet pan back into the oven to melt the cheese.
  • To serve: place the cabbage burgers on a platter. Top with Guinness onions and ketchup!

Variations of Sheet Pan Cabbage Burgers

Give me a burger served anyway and I will consume it. BUT! If you need a little variation for these sheet pan burgers try these on for size:

Spicy Southwest – Add taco seasoning to the patties, top with pepper jack cheese, avocado slices, and a drizzle of chipotle mayo.

Mediterranean Style – Use lamb patties seasoned with oregano and garlic, then top with feta cheese, tzatziki, and sliced olives.

BBQ Bacon – Glaze the patties with barbecue sauce and top with crispy bacon and smoked cheddar.

Asian Fusion – Season the patties with soy sauce and ginger, and serve with a slaw of shredded carrots and sesame dressing.

Vegetarian Delight – Swap out the meat for a black bean or mushroom-based patty and top with roasted red peppers and hummus.

Proper Storing

To keep your sheet pan cabbage burgers fresh, follow these storage tips:

Refrigeration: Store leftover cabbage and burger patties separately in airtight containers. They will stay fresh for up to 3-4 days in the refrigerator.

Freezing: If you plan to freeze them, wrap the burger patties individually in plastic wrap or foil and store them in a freezer-safe bag. The roasted cabbage is best eaten fresh but can be frozen if needed; just expect some texture changes upon reheating.

Reheating: For best results, reheat the cabbage and patties separately in an oven at 350°F (175°C) for 10-15 minutes, or until warmed through. You can also use an air fryer for a quicker, crispier finish.
