Before I dish about our Sunday, I want to say Happy Mother’s Day to all the mamas out there in the world. Thank you for patience, kindness, words of wisdom, love, and chocolate chip pumpkin muffins. Life would not be the same without you!
Since my mother lives in Kansas City, and I couldn’t be with her today, I made her a virtual Mother’s Day brunch for Foodie Fridays. And sent her the funniest card known to man. Maybe she will share the details with us in the comments? By the way Mom, how was the salmon?
Anyways, I hate that I wasn’t able to give her a huge hug today, but as long as she felt special, then mission accomplished! Love you, Mom.
Today Mr. B and I headed north to my second favorite city in the state of Colorado, Fort Collins. Fort Collins is about 45 minute drive (on a good day) north of Denver. It is home to Colorado State University, in my opinion, Kansas State light. The community is centered around agriculture and farming so whenever we drive up there, I feel right at home.
Surprise, surprise we were up and out the door this morning. Who would of thunk? The mission for the day – mountain biking and trail running. Mr. B is the mountain biker in this household because yours truly doesn’t mesh well with switchbacks and clipping in. Dramatic? You bet! I like to keep the feet on the ground if you know what I’m saying.
With a quick pit stop at SBUX’s for coffee, we hit the road. The weather was darn near perfect for an afternoon on the trail, sixty and sunny. Major improvement from yesterday.
The views were gorgeous. Rolling plains, dirt fields, and clouds for miles. If the mountains weren’t in the west, I could have sworn I was standing in the middle of Kansas.
We decided to tackle the Mahogany trail, which was a 7 mile loop. Mr. B, being ever so kind in nature, gave me a brief overview of the map in case something happened. Since he was biking and I was running there could be potential for confusion. Okay, really confusion for me, but that’s not the point. He thought it would be a good idea to meet at every intersection so neither one of us would get lost. Brilliant.
After a quick equipment check, we were off. Mr. B went first on all the downhill parts because it’s faster on the bike. Once an uphill approached, I would lead the way because it’s faster on foot. The first 2.5 miles were brutal. Mind you this was our first trail bike/run of the season, and needless to say, we received a huge dose of reality that we need to get our tookus’ into shape!
Once we hit mile marker three, things started to turn around just in time for steepest part of the climb. I don’t know how we did it, but we crushed it. Slow and steady will always when the race. We definitely high-fived on the top of the peak!
From then on it was pretty much smooth sailing because all of it was downhill. Mr. B finished ahead of me, but I’m not going to lie, the last half mile I thought my legs were going to fall off. I was exhausted, but glad I finished.
We quickly stretched and loaded up the car because we thought it was going to rain at any second. It didn’t. Oh, well. Probably was a good thing because there were still a lot of bikers on the trail. With our stomachs growling, we stopped in Fort Collins to grab a bite to eat.
The first place we saw was The Mayor of Old Town. At this point I was ready to gnaw my arm off, but held off because Mr. B ordered a flight of beer to taste.
Did you know one of the best things to drink after a hard workout is dark beer? Yep, yep! They have a high level of vitamins that help in muscle tissue repair and silicon to help strengthen bones. Pretty sweet, huh?
I ordered a BIG JASS salad and half a turkey sandwich. Homegirl was hungry. You’d think I have never had food before with the way I was inhaling every bite. Geesh.
After our late lunch/early dinner, we hit the road and made it back just in time to call our mom’s and watch #GameofThrones.
Phew.

What a fun Sunday! Wish I could have come with you on the trail. That looks like a SERIOUS workout! Really good training for your marathon-to-come in October. Pretty countryside!
Really enjoyed the salmon from your brunch. : ) We actually had some grilled salmon in KC with Kitty, John, Jordan, and Josie. Kitty made the best very-dill potato salad. I added Foo's Frozen custard and chocolate-covered graham crackers for dessert. We had a real nice Mom's Day meal and we MISSED YOU!
That salad and turkey sandwich looks pretty damn yummy!

In all seriousness, it totally baffles me as to how some people have lived their entire lives having never eaten after a hard run.
To me, that's the equivalent of seeing in color for the first time. Every time.

LOVE YOU!! I had leftover pumpkin from pancakes this morning and wanted something to make with it…pumpkin chocolate chip muffins…mmmm! Oh, and you guys rock.
