Ok, where are my champagne lovers at?
Champagne is typically reserved for sipping and enjoying on special occasions. BUT! I say, why not have champagne on a random Wednesday for breakfast, lunch, or dinner?
Okay, okay. Maybe not an actual glass of champagne. I was thinking more of incorporating champagne into an on-the-go treat. Enter these Champagne Rice Krispie Treats! Perfect treat to enjoy as an adult, but still pay homage to those childhood bake sale days.
The best part? You only Need 6 Ingredients!
This recipe is super simple because you really only need six ingredients. I have a feeling you have all these in your pantry or kitchen now!
- Unsalted Butter– is there anything better?
- Mini marshmallows– use MINI marshmallows because they are easier to melt and you will need a full 16 oz bag plus an additional cup, so buy two bags.
- Vanilla extract– add a splash!
- Kosher salt– the sweet and salty combo is so good!
- Champagne– adds a little somethin’, somethin’ to the treats. If you are making these for kiddos, don’t worry the alcohol gets cooked out so it doesn’t add a boozy taste.
- Rice Krispie cereal– you can use the classic Kellogg’s Rice Krispies or a any generic rice cereal
How to Make Champagne Rice Krispies Treats
Whenever I need an easy dessert, I turn to rice krispie treats. They are no-bake, only take about 10 minutes to make, and everyone devours them!
- I like thick rice krispie treats, so I use a square pan, go with an 8×8-inch or 9×9-inch pan. Spray with a non-stick cooking spray (or use parchment paper) and set aside.
- In a large skillet, melt the butter over medium heat. Add the champagne, stir and let it simmer for about a minute.
- Next, add in mini marshmallows, vanilla extract, kosher salt, and stir until the marshmallows are completely melted.
- Remove the pan from the heat and add the Rice Krispies and gently stir until all of the cereal is well coated. Stir in the remaining 1 cup of mini marshmallows.
- Transfer the mixture to the prepared pan. Lightly press the mixture into the prepared baking dish, using a greased spatula.
- For best results, let the treats cool for about an hour and then cut into large squares at room temperature.

How to Store: Champagne Rice Krispie Treats
You can keep these bars in an airtight container (or in the pan covered tightly with plastic wrap) for up to 3 days. Do not refrigerate the treats. Refrigerating will dry them out and make them too hard and brittle.
