Why Cottage Cheese Bark?

The beauty of bark lies in its simplicity and fun. The cottage cheese gives it a unique texture while the chocolate sets into a crisp shell, with peanut butter and banana adding pops of flavor in every bite. It’s a snack that’s as satisfying to crack apart as it is to eat.

How to Make Chocolate Peanut Butter Banana Cottage Cheese Bark

Chocolate Peanut Butter Banana Cottage Cheese Bark is a quick, no-fuss treat that blends creamy, protein-packed cottage cheese with the classic trio of banana, peanut butter, and chocolate. It’s easy to whip up and freezes into a snapable bark that’s perfect for snacking. Here’s how to make it in your kitchen:

  • In a food processor, add cottage cheese and honey. Blend until smooth.
  • Next, line two baking sheets with parchment paper leaving a 2-inch overhang. Spread the cottage cheese into an even layer.
  • Next, place the chocolate chips and peanut butter into two individual microwaveable bowls. Microwave on high in 10-second increments, stirring between each, until melted.
  • Dollop the chocolate onto the cottage cheese followed by the peanut butter (Between the two baking sheets, I dolloped about 4 to 5 of the chocolate and peanut butter). Using a knife or toothpick, swirl the peanut butter and chocolate. Next, place the banana slices on top followed by a sprinkle of sea salt flakes.
  • Freeze until set, at least 2 hours or up to overnight. Cut into squares and serve.

Variations of Chocolate Peanut Butter Banana Cottage Cheese Bark

Here are some creative variations to switch things up when making a cottage cheese bark:

Almond Butter Berry Bark: Swap peanut butter for almond butter to add a milder, nuttier flavor. Replace the banana with a handful of mashed raspberries or sliced strawberries mixed into the cottage cheese base. Drizzle with dark chocolate and sprinkle freeze-dried berries on top for a tart, fruity twist.

Salted Caramel Crunch Bark: Mix a tablespoon of caramel sauce into the cottage cheese for a sweet, buttery depth. Keep the peanut butter but skip the banana, topping with milk chocolate and a generous sprinkle of crushed pretzels and flaky sea salt. It’s a salty-sweet combo that’s hard to resist.

Tropical Coconut Mango Bark: Use mashed mango instead of banana for a vibrant, tropical vibe. Blend a tablespoon of coconut cream into the cottage cheese, swap peanut butter for cashew butter, and top with white chocolate and toasted coconut flakes. It’s like a beach vacation in bark form.

Mocha Hazelnut Bark: Add a teaspoon of instant coffee or espresso powder to the cottage cheese blend for a mocha kick. Swap peanut butter for hazelnut spread, keep the banana, and drizzle with dark chocolate. Sprinkle chopped hazelnuts on top for a Nutella-inspired crunch.

Proper Storing

Room Temperature: Not Recommended

This bark is meant to stay frozen to hold its shape and texture. Don’t let it sit at room temperature for more than 10-15 minutes while serving, especially in warm conditions. Grab a piece and pop the rest back in the freezer.

Freezing: Best Long-Term Storage

The freezer is where this bark thrives. Break the bark into pieces and store them in a single layer in an airtight container. If stacking is necessary, place parchment paper between layers. It’ll stay fresh for up to 1-2 months.
