I was tired all day today.

I swear it’s the weather. Partly cloudy skies mixed with rain showers are just brutal. My venti coffee from Starbucks couldn’t even give me a boost this morning. Hello May, did you miss the memo that you’re supposed to be pretty and sunny? Err.

Whatevs.

To be honest, the only thing that got me through today was the thought of dinner. Oh yeah, I can think about for that long. This will come as no surprise if your read this blog regularly.

Tonight’s dinner was something I conjured up a couple of month’s ago. I was grilling hamburgers when I suddenly realized that I didn’t have any buns! Doh. All I had on hand was half of a baguette. I thought to myself, what could I do with half a baguette and a hamburger patty?

(Cue light bulb)

“I know”, said enthusiastically. I will slice the baguette and place the hamburger patty on top. Brilliant! And that’s the story of how the fork and knife burger was born.

Okay, I know that this method has probably been around forever but I felt pretty darn cool just thinking about it on the spot. Can I have just a little pat on the back? OH, thank you.
I think the best part about this recipe is the fact that you can add whatever ingredients your heart desires. The choices are endless. It’s like going on a shopping spree people!
Here’s how I make them:
– Grill a hamburger patty
– Top the hamburger patty with pepper jack cheese
– Slice the baguette, two slices per patty
– Assembly your toppings
My favorite toppings: mayo, arugula, shallots, avocados, and jalapenos.
Mmmm…get in my belly!
Fork and Knife Burgers
Serves 2
Prep Time: 10 minutes
Cook Time: 10 minutes
Ingredients:
2 85% lean hamburger patties
Salt an pepper
Olive oil
2 slices pepper jack cheese
1 cup arugula
1 shallot, sliced
1 tablespoon mayonnaise
1 tablespoon avocado
1 teaspoon jalapenos
2 slices of a baguette per burger
Directions:
Let hamburger patties come to room temperature, about 15 minutes. Preheat grill pan to medium-high heat. Drizzle pan with olive oil and grill hamburger patties to medium, 4 to 5 minutes on each side. Place a slice of cheese on top of patty and remove once melted to plate to rest.
While burgers are resting, slice bread and gather your toppings. Lay two slices of the baguette next to each other in a bowl. Place burger on top of baguette and then your toppings. Serve up!
