Hi! 
Friends, I have to tell you, today was a fantastic. Why? I crossed off 90% of my to-do list, soaked up rays of sunshine, and the best part, Mr. B arrived home after being in Hobbs all week! 
I’m telling ya, it’s the little things in life that can make your day. 
Anyways, this morning I slept in and made myself a scrumptious breakfast. 
Sunnyside up eggs topped with guacamole and strawberries on the side. I haven’t had eggs in a while because we’ve been on an oat kick lately, but that’s what Saturdays are for, mixing it up. 
I think the best part about this breakfast was drinking coffee from my K-State mug. Pretty fetch, huh? I was jazz hands excited when I found it in the back of the cupboard. I thought I had lost the little sucker. Apparently it wanted to make an appearance because the men’s basketball team played Oklahoma today. Too bad we lost. Tear.  
After breakfast, I set out to run my errands. First stop, the dry cleaners. Second stop, Target for all sorts of household goodies – Windex, paper towels, chicken stock. Since the Broncos were playing the Patriots tonight, Tim Tebow jerseys were out in full force. I still don’t get why people like him. Can someone please explain? Third stop, Whole Foods. I thought I had gotten away from the whole Tebow craziness, but no. Whole Foods was selling Tim Tebow sliders! AHHHHHHHH!!! If Tebow is ever traded to another team, the city of Denver may implode.
Once home, I picked up around the house and nibbled on some sushi that I picked up while at Whole Foods.

Washed down with an…

Since the weather was freaking gorgeous today (hello, sixty and sunny!), I decided to meet Listy at Wash Park for a little stroll. We actually ended up having a few extras join us – Nick, Jerad and of course the star of the show, Chance (who I got to push in the stroller!) 
We all walked two laps around the park (about 4.5 miles) and chatted up a storm. I love our Denver village. We can talk about anything from politics to our dreams to snow skiing in a matter of minutes. I am very thankful for this group of friends.
After our walk, Listy and I grabbed a quick coffee at Stella’s on the way back home. Once the sun sets in Denver, it can get cold pretty quick. I ordered a skinny vanilla latte that hit the spot. 
I headed home to shower and start prepping dinner for Mr. B. Since he has been on road all week and eating at less than adequate establishments for food, a home cooked meal was way over due. 
On the menu for this evening:
~ Lemon pasta with sauteed garlic shrimp topped with herbed breadcrumbs
~ Arugula salad with homemade croutons dressed with a Dijon vinaigrette
And you can’t forget the wine!
