This morning we said goodbye to the Rockies…
and said hello to the prairies!
It’s been awhile since Mr. B and I have driven home for the holidays. We usually fly, but with airfare prices being outrageous, we decided to hit the open road.
Kansas, here we come!
Even though for the past week I have been stressing out about packing for this road trip, we managed to get everything done. Whew.
I don’t know why I get all worked up over packing a car (I can be such a Drama Queen). Anyways, the good news is that all of that anxiety flew out the window when we hit the road.I mean really, who could remain stressed when you’re looking at the plains all day?
The drive from Denver to Wichita is probably the easiest in America. Head east on I-70 for seven hours, turn right at Salina, drive southeast for an hour and then BAM…Wichita! Soooooo not complicated.
Our first stop was in Colby for a potty break and to grab some grub from our cooler. This was the best idea EVER! I made sandwiches so we wouldn’t have to eat fast food. I don’t know about you, but sitting in a car for eight hours with a stomach full of greasy fries sounds like the pits.
Sandwich mix:
– pita with grilled chicken, romaine lettuce, shallots, tomatoes, and lemon aioli
On the side:
– pasta salad
– apple slices with almond butter
Dessert:……errr…I hate the chocolate chunk cookie before I took a pic:)
After lunch, the drive seemed to zoom by thanks to Mike Doughty. His new album is freaking sweet. My favorite song so far has to be Holiday. (By the way, Mr. B told me that he came back from a heroin addiction. First of all, who does heroin? Isn’t that something people used to do in the 70’s? And second, how the hell do you even get heroin? I mean, if you’re even going to do drugs, why not stick to pot? It’s everywhere and doesn’t require needles. Right? Right.)
Excuse the drug tangent. Where are my manners?
We actually made really good time and arrived in Wichita around 6:30. Total trip time: 7 hours and 15 minutes. Booyah! Like I said, the drive was easy, especially when you get to stare at beautiful sunsets.
I miss Kansas.
Once we arrived at the in-laws (a.k.a The Griswolds), we unloaded the car, and then immediately dove into cocktails and dinner.
Susie prepared a wonderful turkey eve meal….pot roast with roasted carrots, mashed potatoes and rolls. She is a fantastic cook!
Since Scott’s birthday was on Monday we had to celebrate with chocolate sheet cake and ice cream! I am obsessed with this cake. The frosting has butter, cocoa, and granulated sugar. De-lish.
Now I am off to bed.
Today was a BIG day and I need my rest before the BIG feast.

Thankful Challenge: Day 23
Today I am thankful for road trips because even though sitting in a car for eight hours is annoying, I still find peace staring out onto the open road.
I have driven Kansas highways for over 30 years. You see the prettiest sunsets, stretching across the horizon. Mother nature at her finest.
