Making this soup right now. Looks delicious. I added bok choy because I had some in frig. That’s what nice about vegetable soups, you can clean out the frig. Loved learning about the cheese rind to flavor the soup. Never knew that was a thing! I didn’t see where to add the ground beef back in so added it with the beef broth, etc. Thanks for the recipe!
