Well, I’ve up and done it.
{Barry White voice}: ahhhhhhh…..yeahhhhhhh.
As I mentioned yesterday on my travel recap of Charleston, I ate the ultimate burger. Come to think about it, I might just knight the darn thing. I dub thee, Sir Burger of Burgers. Hey, doesn’t every girl need a knight in shiny, gooey, juicy cheese? Wait. That could be weird.
But fo’ reals. What is it about a juicy ol’ burger that makes us weak in the knees? Is it the meaty burger itself? Or the toppings? Or is it simply, the satisfaction of comfort food? Anytime I see a burger on the menu, whether it’s dipped in foie gras or in it’s purest form – cheese, lettuce, and tomato, I become giddy. I have true admiration for the burger. Why? Because a burger doesn’t judge. A burger is like an old friend. You may not order it every time you are at restaurant, but when you do, it’s like nothing has changed. It loves you no matter what…even if you ate a veggie burger! (wink, wink).
So, you could imagine my excitement when I stumbled upon my old Southern friend while in Charleston. This burger is not for the faint at heart. Hello, fried green tomatoes, pimento cheese, and BACON! Okay, riddle me this batman. How is it that I’m 30 years old and just now trying pimento cheese? I feel like they should be handing out samples in the maternity wing of the hospital or something. I mean, who needs ketchup and mustard when you could have a condiment of cheddar cheese mixed with mayo and peppers? Am I right? Right.
After devouring this bad boy, I knew the second I touched down in Denver I had to recreate this burger. Instead of making fried green tomatoes (I figured I’d best leave that to the folks of the South), I sliced up some heirloom tomatoes, kept the bacon, and pimento cheese, but I doubled the trucker. It’s like a mountain of juicy goodness. Because don’t they say, two is better than one?
I rest my case.

I totally hear Barry White. And I totally need this burger. I have never tried this pimento cheese but I will!!

Oh.my.geez! I’m totally on a burger kick right now, as in at least once a week they’re being made. AND I totally have some chipotle pimento cheese in my fridge right now. These could not be more perfect!!

I’m tempted to wake up my boyfriend, shove my laptop in his face and say, “Look! Marvel at the amazing pimento burger!” Maybe I’ll wait until he’s had half a cup of coffee first 😉

Phew! I seriously thought I was the only person that had yet to experience the taste of pimento. BTW…you gotta try it now:) And I definitely think a picture of me trying to eat this tower o’burger is totally warranted.

1 – I totally read “Barry White” as “Betty White” and thought of Betty White saying Ohhh yeahhhhh and it made me LOL.

YOur pictures drew me in this morning a nd I could not shake the feeling that I was destined to make these burgers. Homemsde pickles, homemade buns, homemade pimento cheese with a dab of horseradish. That was a mighty fine burger! I made them singles – after all, how can you climb grier mountain (or any incline) after eating a burger like that!
