st. paddy’s corned beef burgers with irish cheddar cheese
Happy St. Patrick’s Day!
How are you celebrating this Irish holiday? Drinking a pint of green beer? Kissing a leprechaun? Pinching others who aren’t sporting green attire? This holiday makes me smile because it’s the one time during the year where no matter what heritage you hail from, you are Irish for the day.
I am not sure how I will be celebrating today. Might have to bust out an Irish jig while wearing a “Kiss Me I’m Irish” t-shirt. Back in the ‘ol college days, Fake St.Paddy’s (the week before the actual holiday) was a big deal. They would open up the bars at 6 AM and you would drink beer well into the afternoon as you watched the downtown parade. All I can say….sh$t show.
As much as I would love to think my thirty-one year old self could throw down like the old days, I think it’s best to keep my reality aimed towards making some delicious burgers. Oh, and not just any burgers. These are practically worthy of sainthood. St.Patrick would totally give this corned beef burger three clovers up.
What I love about these burgers, besides the touch of Guinness to the beef patties is the gooey, melting Irish cheddar cheese on top. Beer and cheese? You can’t ever go wrong. My 1/200th Irish heritage is smiling.
st. paddy’s corned beef burgers with irish cheddar cheese
Ingredients
- ½ lb ground corn beef
- 1 lb ground beef
- ¼ cup Guinness
- dash of Tabasco
- 2 tbsp olive oil
- 1 cup sauerkraut, drained
- 4 slices Irish cheddar cheese
- 4 whole wheat buns
- Yellow mustard
- Salt and pepper to taste
Instructions
- In a large bowl combine corned beef, ground beef, guinness, tabasco, and s&p. Form into 4 large patties.
- Preheat a skillet to medium-high heat. Add the olive oil and then each burger patty. Cook the burgers for about 5 minutes on one side, flip and then cook for about 3 to 4 minutes on the other side depending on well you like to have them done. Remove burgers and place them on a plate to rest for a minute.
- Preheat a broiler. Place four buns on a baking sheet and lay a slice of cheese on top of the burgers. Put baking sheet under broiler and let the cheese melt.
- Remove sheet from oven and top each burger with sauerkraut and mustard! Enjoy!

I’m exactly 0% Irish and even I know that beer and cheese were made for each other! I like to think that fact somehow rubbed off during my four years in Boston..which probably makes me Irish by association, no?

Sounds great, serve on a quality pretzel bun,substitute southern slaw for kraut.For a real Irish experience serve on griddle bread.
Why not go all the way? Use Kerry Gold Irish Butter not Olive oil, just cut back on the salt.

Can these be made without ground beef and just ground corned beef?
