Haitian Chicken
Haitian Chicken is an easy, one-pot dish full of flavor! Chicken thighs and drumsticks marinated in roasted tomatoes, white wine, and dusted with garlic powder and cayenne make for a fantastic dinner any night of the week!

Also, I wanted to send a message to all the folks out there who messaged me about feeling stuck and wanting to do something different, but not quite sure how to make the leap. I know it’s scary. Believe me, it took me 10 years to finally make the leap. My advice, listen to your gut. It will tell you when you need to go. Taking a risk does take energy and thoughtfulness, but I promise you, in that moment of chaos a new world will open for you. And that’s where the magic happens!
Well, speaking of listening to your gut and making a passion project come to life, today’s recipe is an exact reflection of investing in yourself. This Haitian Chicken recipe is from my friend Liz (author of the healthy food blog The Lemon Bowl) third cookbook: Food From Our Ancestors: The Ultimate Jewish Shabbat Dinner.
I can’t say enough wonderful things about Liz without tearing up. Something she taught me recently was “you’re the average of the five people you spend the most time with.” Powerful yes? Which is why I am so blessed to have Liz in my tribe because her passion and enthusiasm in life is infectious. Seriously, go read her blog and I promise you will feel like you can conquer the world afterwards.
Anyways, back to the recipe! This Haitian Chicken like I mentioned above is part of a self-funded passion project and is number three in a series of cookbooks. This third cookbook is particularly special because it’s a collection of her Jewish grandmother’s time-honored recipes handed down to her from her ancestors. Can you say street cred?
What I love about this recipe is not only is it simple to make (hello, one-pot dish!), but the flavors practically burst from the pot. Whole peeled tomatoes, cayenne, garlic powder, white wine, tomato paste create this delightful, yet comforting marinade. Combine it all in a pot and let it simmer away for an hour. OMG. You’ll definitely be adding this dish to your regular dinner rotation!

I am so glad you all enjoy my recipe for Haitian Chicken , rice and beans. This is one of the many that my granddaughter Liz Dellacroce included when filming me for her cookbook, A FAMILY SHABBAT DINNER. Haitian chicken has been a family favorite of my seven children for over 45 years. I have learned to make a double recipe because it’s even better the second day! And DO make a lot of the marinade that the chicken simmers in as it’s fabulous over the rice and beans.As we say , “Enjoy and Bitai-avon!”
