It’s another gorgeous day here in The Mile High City.
The sun is shining, the air is crisp, and today is Mr. B’s birthday!
Yay!!
I thought I would surprise him this morning with some homemade birthday pancakes for breakfast. Who doesn’t love pancakes, especially on your birthday? I have been dying to try this pancake mix for the past year, but have never found a good excuse to purchase a box until now.
Kodiak Cakes are made with 100% whole grain wheat and oat flour, and all natural honey. I was a little skeptical at first because you never know with organic products. Sometimes the taste can be way off.
I followed the package instructions:
– In a bowl, combine 1 cup of water with 1 cup of the pancake mix, and stir. I also added a pinch of nutmeg and cinnamon to kick the batter up a notch.
I was surprised how fluffy the pancakes turned out, and the taste was incredible. I think it’s safe to say that Kodiak Cakes are going to be added to the pantry of fun.
Oh, and I didn’t just stop with the pancakes, it’s Mr.B’s birthday people, we have to go BIG! I decided to caramelize a couple of banana slices as well.
(Preheat a skillet to medium. Add a tablespoon of butter as well as your banana slices. Brown on both sides and serve).
Holy bananas! These bad boys were off the charts.
Also on the pancakes:
– peanut butter
– chia seeds
– blueberries
– maple syrup
And of course….birthday candles!
