Have you ever had breakfast in bed? Come to think of it, I’ve never consumed any meal in my bed. I’m not sure if that’s a good thing or a bad thing.
On one side, if someone were to serve me up a big ‘ol stack of flapjacks with syrup and a cup of joe, there is a 97.6% chance the syrup will end up all over the duvet cover and under my pillowcase.
But! On the other side, I wouldn’t mind Mr. B serving me a delicious, hearty breakfast in bed every now and again. It’s very Downton Abbey-ish. I didn’t know this, but it was proper for a married woman to be served breakfast in bed. I’m kind of digging that tradition.
Since Mr. B is traveling, the next best thing is a Noosa-licious brekkie in bed! Oh,yes! The kind folks over at Noosa Finest Yoghurt delivered fresh yogurt to my door a couple of weeks ago. Talk about first-class service. Noosa (Aussie) style yoghurt is made in small batches on a family-owned farm right here in Colorado!
They have a wide variety of flavors, but my favorite is definitely the lemon. I think it works perfectly in this blueberry oat smoothie. Something about blueberry and lemon together that makes the world a better place. Plus, it’s like free brain food to start your morning off on the right foot!

Blueberry Lemon Oat Smoothie with Blueberry Streusel Topping
Ingredients:
for the smoothie:
2/3 cups Nossa Lemon Yogurt
2/3 cups Old fashioned Oats
2 bananas, diced
2 tablespoons chia seeds
dash of cinnamon
1/2 cup milk
1/4 frozen blueberries
for the streusel:
1/2 cup oats
1/4 cup all-purpose flour
2 tablespoons brown sugar
1/2 stick unsalted butter, melted
Directions:
for the smoothie:
In a small food processor (I use a small Cuisinart one or you can place everything in a jar with a lid and add it a food processor later), place all ingredients. Place in fridge overnight. Morning of, blend the ingredients until slightly smooth. Pour into a breakfast bowl and garnish with streusel and a drizzle of honey. Omit streusel if you wan to keep it healthier.
for the streusel:
Preheat oven to 350 degrees. Spray a baking sheet with non-stick cooking spray. In a bowl, combine ingredients. Place streusel on baking sheet and spread evenly with the back of a spoon. Bake for about 15 minutes or until golden brown. You might want to stir the streusel occasionally making sure it doesn't burn.
Love Love Noosa.. this smoothie is something I can get down with.. and I think my husband missed the breakfast in bed memo.. 😉

I’m with you, Lauren. Pretty sure most of breakfast in bed would end up ALL OVER the bed. But that doesn’t mean I wouldn’t give it a go with some yummy strawberry-rhubarb Noosa!
