chicken and chickpea salad pita sandwiches with broccoli sprouts
“Delight in a burst of Mediterranean flavors with our Chicken and Chickpea Salad Pita Sandwiches. These vibrant, wholesome pockets offer a perfect blend of protein and freshness in every bite.”
The great and POWERFUL food OZ has spoken.
2015 foods that you should add to your diet are…….drumroll, please!
Matcha, Kalelettes (hybrid of brussel sprouts and kale), Plantains, Watercress, Lychee, Purple Peppers, Coconut flour, Broccoli Sprouts, and…wait for it, Crickets! For reals. Actually, you know some intern threw that into this Yahoo article just to make sure people were paying attention. Unless, it’s dipped in foie gras, yours truly is going to pass on the ol’ cricket eatin’,
The rest of the recommend ingredients I can hang with. So stoked to see plantains on this list. I made these twice baked beef and chorizo plantains with homemade queso last year that need to be actioned again ASAP. Also, completely intrigued with the whole Kalelettes situation. I am obsessed with brussel sprouts, but kale, I’m kind of “meh” about. Thankfully, some British guy got smart and meshed them together so I have a fighting chance of actually eating kale for once in my life!
But out of all these fellows, I have never heard of broccoli sprouts. Have you? Basically it looks like an alfalfa sprout, but it has super powers. As in cancer super fighting powers. Truly, I am surprised that Popeye isn’t chowing down on this stuff. I honestly didn’t have a clue what they would taste like, but surprisingly for a raw veggie, they don’t taste like dirt paste. Win.
I thought the broccoli sprouts would go perfect as a topper on these chicken and chickpea salad sammies. This is definitely my new go-to for quick lunches because it’s light, healthy, and full of protein. Simple, easy, and Food OZ approved.
Now, follow the yellow brick road.
“In conclusion, our Chicken and Chickpea Salad Pita Sandwiches provide a satisfying conclusion to your culinary journey. Packed with Mediterranean goodness, each bite leaves a lingering taste of wholesome delight.”

You know when you see something to eat and it looks like it would totally hit the spot right at that moment… that is how I’m feeling about this sandwich. And kalelettes – never heard of but totally intrigued
I have never seen broccoli sprouts before! Thanks for drawing my attention to them – have to keep my eyes out for a bunch.
I’m 110% into the sprouts!! And the chicken. And the chickpeas. and did I mention the sprouts? Yup, sign me up!
I so want this for lunch!
Last year we had presentations in a discussion class and one guy brought an article about how eating crickets is going to save the world. Uhm… I get that it would be great to reduce the amount of chicken and beef we raise, but I’m right there with you… Gimme foie gras to dip it on or I’m not going to eat it. Love these pita sandwiches – they look so fresh and healthy. Definitely something I need in my life!
Lauren, these shots are absolutely stunning! That’s it. I’ve decided I want to be you when I grow up. Well, you and my 75 year old neighbor who is the hippest 75 year old woman you’ve ever met. I’ll be a hybrid of you both.
This looks soooo delicious! Gorgeous pictures!
Lauren this is my kind of meal!! I know my hubby might not approve of it but I can totally see myself eating his portion too!! Looks so so darn tasty!!
I’m on board with anything that has super powers especially if they don’t taste like dirt. Hurrah for broccoli sprouts!
Oh my goodness this is my kind of eatin’. Love this pita girl! I’m a sprout lover so happy to see a version of them on that list. And coconut flour, I’ve made pancakes with it and they turned out pretty good! Interesting list!
CRICKETS = no thanks.
Kalelettes, sprouties, and plantains = you can count me in!!
Lauren, this pita sandwich is calling me! It sounds like perfection. I grew up on pita sandwiches while all the other kids at school had “normal” sandwiches. The tides have shifted ;). I am definitely making it this weekend and I’m really hoping I can get my hands on some broccoli sprouts! Your pictures are impeccable too btw 🙂
