Breakfast time can be tough.
Every member of the family needs to get out the door quick, fast, and in a hurry, and often there’s not enough time to actually sit and enjoy a meal.
As a mom, I often reach for easy and conventional food items to quickly get breakfast on the table. Yogurt pouch? You got it. Blueberry muffin? Take two. Pop-tart? Just this once.
If you’ve been a long time reader of The Curious Plate you know that I am on team cake and team waffle. I used to eat waffles every morning as a kid before school. Well, with the recent cottage cheese trend and always looking for ways to add protein in the morning, I thought, why not add cottage cheese to the waffle batter?
I know, sounds a little crazy, but by whipping the cottage cheese it makes for the creamiest, fluffiest waffle batter. Plus, you can make these ahead of time, freeze, and reheat quickly on those busy mornings when you need a meal on the fly.
Why Use Cottage Cheese
Cottage cheese is the quiet hero in the dairy family. It’s low in fat and high in protein and other important nutrients like Vitamin B12. Fun fact: the protein alone in cottage cheese is over 70%. Crazy, huh? By adding cottage cheese to waffles you’ll walk away with over 17 grams of protein from a single serving.
Ingredients Used to Make Cottage Cheese Blueberry Waffles
The combination of cottage cheese, all-purpose flour, flaxseed meal, and peanut butter make these waffles a dream to eat in the morning. They are healthy without tasting like dirt paste. For this recipe you’ll need the following ingredients:
- Cottage cheese – I like to use full-fat cottage cheese because I think it holds up better in the batter. You can certainly use low-fat if you would like.
- All-purpose flour – base of the dry ingredients. You can also use gluten-free flour
- Flaxseed meal – great way to add fiber to your waffle batter
- Granulated sugar – you’ve got to sweeten these waffles just a bit
- Baking powder – helps the waffles to rise
- Milk – needs moisture to help the batter combine
- Egg whites – keeps the batter fluffy
- Peanut butter – adds a creaminess and delightful flavor to the batter. You can also you sunflower butter or almond butter
- Vegetable oil or coconut oil – need fat! You can try using regular butter too!
- Fresh blueberries – use any kind of berry you have on hand
How to Make Cottage Cheese Waffles
- Place the whole container of cottage cheese in a blender or food processor. Blend the cottage cheese until smooth. If you need to add a splash of water or milk to help get it moving that’s okay!
- Once blended, set aside 1 ½ cups of the whipped cottage cheese. Next, in a medium bowl combine flour, flaxseed meal, sugar, baking powder, and ¼ tsp kosher salt.
- In another mixing bowl, whisk together the remaining 1 ½ cups whipped cottage cheese, milk, egg whites, peanut butter, and vegetable oil. Add the flour mixture to the cottage cheese mixture and gently combine. Fold in the blueberries.
- Preheat a waffle maker to medium heat. Spray with cooking spray and take about ⅓ cup of the waffle batter and place it in the waffle iron. Cook until golden brown for about three minutes. Remove from the waffle iron and set aside. Repeat the process until all the batter has been used.
- Garnish waffles with butter, honey, and reserved whipped cottage cheese!

Toppings for waffles in my opinion are the best part! So many options, but here are a few of my favorite toppings:
- nutella and sliced bananas or strawberries
- yogurt and blueberries/strawberries/raspberries
- butter and maple syrup
- whipped cream and sprinkles for the kiddos!
- peanut butter and banana slices
- chocolate chips

- Can I make these waffles using oat flour or whole wheat flour? Absolutely! Simply swap out the flours as needed.
- What should I serve with these waffles? I would suggest a medly of fresh fruit or greek yogurt.
Storing Notes
If you have leftover waffles you can store them in an airtight container or plastic bag at room temperature for a day. After that, you should freeze them. Great thing about waffles is that they will hold up well in the freezer for at least 6 months. When you are ready to use, simply reheat in the microwave or toaster oven.
