  • Bring a large pot of water to a boil and cook the gnocchi according to package instructions. Remove the gnocchi from the pot using a slotted spoon and transfer to a paper towel-lined plate. 
  • In a large skillet pre-heated to medium heat add the bacon. Cook the bacon until crispy and the fat has rendered about 4 to 5 minutes. Using a slotted spoon, transfer the bacon to the plate lined with a paper towel. Leave the bacon in the skillet.
  • Return the skillet with the bacon fat to medium heat and add the gnocchi. Toss the gnocchi in the bacon fat until lightly golden. Remove the gnocchi and place in a large mixing bowl to cool slightly. 
  • In a small mixing bowl whisk together the olive oil, garlic, red wine vinegar, ½ tsp kosher salt, ½ tsp ground pepper, 1 tsp dried oregano, and 3 tbsp fresh chopped basil. 
  • Add red onion, olives, salami, pepperoni, artichokes, bacon and mozzarella balls to the gnocchi. Drizzle the top with the vinegar mixture and toss to combine. Serve and enjoy!

  • 3 tbsp Olive oil
  • 1 clove Garlic, minced
  • 2 tbsp Red wine vinegar
  • 1 tbsp Fresh chopped basil
  • 1 tsp Dried oregano
  • 1/2 tsp Kosher salt
  • 1/2 tsp Ground pepper
  • 1/2 cup Pitted, sliced kalamata olives
  • 3/4 cup Mozzarella pearls
  • 1/2 cup Chopped marinated artichokes hearts
  • 1/2 cup Sliced pepperoni
  • 1/2 cup Sliced salami
  • 1/2 cup Sliced red onion
