Have you ever met someone who immediately rolls their eyeballs after you say, “I have no idea what to make for dinner tonight. How about we make a delicious sweet potato & salami hash with fried eggs or a stack of Easy Churro Pancakes with Sweet Potato Chip Streusel?” No one that’s who. Because everyone loves breakfast for dinner.
I swear half of the recipes on this blog could be converted to brinner type dishes. Throw an egg on top of some enchiladas, brinner. Add cornflakes and nutella to French toast, brinner + dessert! But I have to say, throwing sweet potato chips into a streusel mixture and putting it on top of pancakes makes brinner the ultimate winner.
These easy churro pancakes are fun to make during the week, brunch, or for a special occasion. Take your basic flapjack recipe and then dip the pancake into a mixture of sugar and cinnamon. Top the pancake with sweet potato chip streusel and smother the entire darn stack with maple syrup.
You could be super naughty and add an egg on top of these pancakes. But that’s for an entirely different post all together.

Easy Churro Pancakes with Sweet Potato Chip Streusel
Ingredients:
for the churro pancakes:
1 cup whole wheat flour
3 1/2 teaspoons baking powder
1 egg
1 teaspoon kosher salt
1 1/4 cups whole milk
1 tablespoon granulated sugar
3 tablespoons unsalted butter, melted
1 1/2 cups whole milk ricotta
1/2 cup unsalted butter, melted
1 cup granulated sugar
1 tablespoon ground cinnamon
Maple syrup, garnish
for the sweet potato streusel:
1 cup sweet potato chips, crumbled
1/4 cup all-purpose flour
2 tablespoons granulated sugar
2 tablespoons vegetable oil
1 teaspoon cinnamon
1 tablespoon oats
Directions:
for the churro pancakes:
Preheat a skillet to medium heat. In a large bowl, combine flour, baking powder, salt, and sugar. In another large bowl, combine egg, milk, butter, and ricotta. Add the dry ingredients to the wet ingredients. Once the batter is combined, pour about 1/4 cup of the batter into the skillet. Brown on both sides. Repeat process until all the batter has been used.
Once you’ve assembled your pancakes, in a large bowl combine granulated sugar and cinnamon. Take a pancake and brush the melted butter on both sides and dredge the pancake through the cinnamon sugar. Place the pancake on a plate, top with sweet potato streusel, and drizzle top with maple syrup. Continue process until all pancakes are covered. Enjoy!
for the sweet potato streusel:
Preheat oven to 375 degrees. Spray a small baking sheet with non-stick cooking spray. In a bowl, combine potato chips, flour, sugar, oats, cinnamon, and vegetable oil. Spread the streusel mixture onto the baking sheet and place into the oven for about 7 to 10 minutes or until golden brown. Remove baking sheet from oven and using a spoon lightly fluff the streusel.
